If they are of higher status, and/or I am being flippant, I will call people 'sir' or 'madam'.
There is no such thing as higher status. Its a concept made by people who think they are better than everyone.
*cough* communist *cough* =P

I call police officers Sir, Ma'am and Armed Forces officers. I sometimes say it to my mates, but never seriously

To police officers and customers when at work. Also during job interview.
Police officers? Really? I'd probably just plainly call them officer.

Never. It always feels awkward when I call someone "sir", I don't know why. I just call them "Mister" or try to avoid saying their name altogether.

I has got a proper little "problem" with authority. Was supposed to do it at school but I just never said it, didn't say anything else just got their attention other ways. Never ended sentances with sir, but we wern't expected to, so wasn't hard to avoid.
Do the same with everyone else that expects the situation out of me, or call them Squire, my much prefered term which they shouldn't be annoyed at.

I only say "Sir" in friendly banter.

Very rarely do I call someone "Sir" online.
In real life I do it a lot more, I usually call the male teachers at school "Sir".

Only in real life and only when speaking to authority figures (like police officers), or my elders.

I work in law enforcement so Five days a week I have to say Sir about 500 times. Although, every job I've ever had I address people as "Sir" or "Ma'am" until I know them well enough to call them by name as a habit.

Whenever I talk to any other adult male that I don't know personally.

Of course, I expect the same courtesy from any other stranger; it's merely simple politeness, like calling a lady you don't know 'madam', rather than 'you, woman'.

I have to call my male teachers that.

Sometimes for fun I say to one of my teachers "Excuse me miss?"Although it does land me into trouble....
