Uncharted 3, I've beaten Uncharted 2 at least four times and still replay it every once in a while.

Uncharted 3, definetly.
I love the Uncharted series so far. I think the second was a bit worse than the first, but it's still an amazing game. Don't have much intrest in the major FPS games since I don't play online anymore. The campains tend to be very short, so there's no reason for me to buy them.

Though I don't own a ps3 and have no plans to get either of them, single player ALWAYS comes first to me. Battlefield just looks generic to me anyway. Extremely PRETTY, but generic.
Uncharted 3 actually does have a multiplayer draw and a single player draw it may not be as dynamic as BF3 multiplayer, but from what I've heard Uncharted multiplayer has a surprising amount of depth, plus the coop stuff looks better than the measly 6 missions in bf3. Both look cool, but if I had to pick go Uncharted all the way.
As a guy who prefers single-player, story-driven experiences, and doesn't mind a bit of cinematic flair in his games, I'd go with Battlefield 3.
Mind you, I don't have a PS3, and I've never played the Uncharted games; but I am aware of their quality, and I think they're something I would really enjoy. I still say go for Battlefield 3.
Not for the single-player, mind you, that'll be either crap or mediocre; but it's right up there with CoD when it comes to defining multiplayer shooters, and by all accounts is going to be a big deal online for many years to come.
You will, without a doubt, get more value for money if you buy Battlefield 3. Assuming you enjoy that type of game, of course, but why would you be asking if you didn't?

If you can, Battlefield 3 for the PC for larger maps and jets, but if you are buying for the PS3 only then I think from what you say Uncharted might be a better fit for you. I had a look at the BF3 campaign last night after the server I was playing on crashed, and while it is pretty on PC, that sort of game doesn't really do it for me in single player. (I hate Bioshock and have avoided most AAA shooters in the past six years so take what I say with a grain of salt).

Well, because I have a PC and 360, I would go with Uncharted 3, presuming it magically became a non-PS3 exclusive.
