Gotta say the PSP, just purely because it has the most processing power out of the 3, has the largest amount of games, and can do everything pretty much. Internet, good games, even video capture and skype!
And IMO the other two are just gimmicks. Actually no, the DS is a gimmicky console, the iPhone isn't a console really, it's a phone!

It really depends. To be honest, the PSP does have a lot of good titles, but probably not as many as the DS. The PSP is the best as far as RPGs go, particularly JRPGs.
The iPhone? Just... no.

DS wins for me. It has good games, and lots of them. Plus, I hate that the iPhone doesn't allow the use of a stylus. I tried the iPhone one once, but quickly found that the screen became covered in blotchy fingerprints, making it sorta hard to see.
On top of which, I don't feel like paying $400 for a handheld system, even if it does have a built in phone.

The iPhone is like the NGage (by which I mean it's an expensive phone that happens to have apps) with a development kit that anybody can use. While it's good that anybody can use it, it's also bad that anybody can use it.
I'm not saying the iPhone completely sucks for gaming, it's just not the best platform especially given Apple's odd and contradictory policies regarding content approval that seem to adjust day to day.

I like the PSP, but it only has a few good games, and the games are pretty high priced (compared to DS and iPhone) so... hands down, DS. good prices for their games, and many good games (even though I only play about 5 of mine consistently [Castlevania series, Pokemon Pearl, New Super Mario Bros., New Super Mario 64])
