Cheddar Potato Soup with Bacon

4 bacon slices
2 large onions
1 lb. boiling potatoes
¼ cup all-purpose flour
1 ¾ cup water
1 ½ cup chicken broth
¼ cup dry white wine
2 cups grated sharp cheddar (about 8 ounces)
2 tbsp chopped fresh chives

Chop bacon and in a large heavy saucepan cook over moderate heat, stirring occasionally, until crisp. Transfer bacon with a slotted spoon to paper towels to drain, reserving fat in pan.

While bacon is cooking, chop onion. Peel potatoes and cut into ½ inch cubes. Cook onion in reserved fat over moderate heat, stirring occasionally, until softened. In a measuring cup stir together flour and water and add to onion with potatoes and broth. Simmer mixture 5 minutes, or until potatoes are just tender. Add wine and simmer 1 minute.

Reduce heat to low and gradually stir in cheddar (do not let boil).

Divide soup among 4 bowls and sprinkle with bacon and chives. Makes about 5 cups.

****Note****

We usually use 2 pounds of potatoes for this recipe, and keep the liquid about the same amount.

I like the flavour of onions, but not eating the onions in any way themselves. I love when steak or any other meat is sauteed in onions, for instance, but I take them off when they are on my burger.

Really? I like them. I can even eat them raw... But they are better in something like a hamburger or battered into onion rings...

I despise them and all their forms. Including onion flavoured crisps, like cheese and onion, cheddar onion or pickled onion. (Except monster munch, they are the only series of crisps, with a pickled onion flavour that I will eat.)

Also the onions that are usually in a spaghetti with dolmios sauce meal, I go as far to pick them out one by one.

I'm not too picky with my food, I just really don't like them.

I like eating large chunks of raw onion, but then I also once ate a spoonful of coffee powder because my mind thought 'last time I did this it tasted horrible, but I still reckon half a spoon wasn't enough.'

Never had the opportunity to eat raw garlic; think I should probably rectify that sometime.

I think parts of my brain hate me.

Not sure why you put "called" in all CAPS, but ok. It's not so much that i dislike onions and love garlic. It's that i love garlic and only mildly enjoy onions.

Fry em up, serve them with everything.
From pasta to ice cream. Add them to trail mix for some savory flavor with the raisins.

Hmm, I am wondering what you will pull out of this thread to make your next thread's topic...

I don't care much for onions if you must know. I am relatively positive towards ogres though and they both have layers. That's pretty similar right there.

Garlic is okay I guess.

They're pretty nice. I like having mini-onions in my mothers beef stew....mmmmm.

I'm afraid that I won't be able to eat them when I'm older, though. It runs in my family to have terrible gas whenever you eat any vegetable besides lettuce....
