My vote goes to World at War. It felt like they actually tried to match the sheer brutality of actual combat as opposed to the more shoot 'em up style of the other games. There were dismemberments, decapitations, bloodbaths, and everything else that comes along with war. It felt like it was aimed towards a more mature audience.
The multiplayer was also great fun. Aside from the popular MP40/ Juggernaut class, the game had great balance. Every weapon was valid and didn't step on the toes of other ones.
