Context is key. Let's look at three situations in which someone might call white skin "normal".
Situation A;
You're talking about "normal" white skin in the spectrum of white-only skin tones. Example; Pale White, "Normal" White, Sun-tanned White. Not offensive because you're only talking about variations of white skin (and they are variations that any white person could achieve if they so wished).
Situation B;
You're talking about "white" being "normal" because you live in the States (or similar white-majority nation). Mildly offensive due to the implication that other skin colours are therefore "abnormal". Situation could easily be fixed by using the words "majority"/"minority".
Situation C;
You're talking about the entire spectrum of human skin colours in all parts of the world, and calling white "normal". You're not trying to make a distinction between the variations on white skin like in Situation A, and you're not referring to a race majority as in Situation B (because white people are not the majority of the world's population). You're just expressing a preference for white skin, once again deeming other skin colours "abnormal", and therefore being racist.
You're using the word "normal" in the context of situation A.
OP, unfortunately, is combining both situation A and C, making it teeter on the edge of offensive.
