The one I enjoyed the longest was Ultima Online. I don't know if it was the novelty of a new genre, or the fact that is was the Wild West in terms of player killing, but no MMO I've played since has held my attention as long, or been nearly as fun.
EVE online its a massive sandbox you can build a massive sandcastle or find one that some one built and destroy it.
Problem is EVE is hard and most people are to lazy or stupid to learn the game so quit and clame its a bad game then run off to wow only to go back to the eve fourms and say wow is better.

Space Cowboy online was my favorite. Its called Air rivals now due to legal battles. Its basically a MMO space combat shooter. It was grind-tastic though.
As for mainstream MMO's I play LOTRO and Guild Wars. Guild wars is nice since you can get max level in a day and get to the good stuff. LOTRO is good for when I want to play something expansive and deep. Plus LOTRO is the only MMO i have found without a dumb/jack-ass population. Another plus for LOTRO was the ability to pay $200 lifetime. It was a big upfront, but figure $15 a month for other MMO's its $195 for 13 months. Its a big money saver in the end.
