Yeah, it does. I believe that XP (pro anyway) supports up to 64 screens, though I'm not sure what sort of graphics card you'd need to run it. And yes, you can stack them any old way you like - in the display properties you can basically drag the displays around to match the monitors physical location.
Back on topic - widescreen laptop here, but I tend to use so many apps at once I think I'm going to have to get a secondary screen because I need the real-estate. Am using linux most of the time for work stuff and even though I have 6 desktops and can easily swap between them using the desktop cube I would really like to be able to see everything that I'm running at once.
I have no idea why those dudes in the Matrix had all those green screensavers running all the time - I'd deffo use a set up like that more wisely..
