My favorite stealth games include:

1. pretty much every stealth section must be wide open and multileveled with many ways how to navigate around and escape sight
2. if you fuck up, you should be given a few seconds to kill the person who spotted you for no consequences
3. the enemies you are stealthing around or killing are NOT humongous unkillable brutes who can kill you in one shot
4. most takedowns are fisticuffs
5. enemies must be aware (and get paranoid) of seeing people mysteriously die
6. not be in first person (refer to point one, it simply works better)

That being said, Batman: Arkham Asylum. Still haven't tried Arkham City.

I like all of those listed to some degree. Hitman 2 and Hitman: Blood Money were both fantastic games, with Blood Money being the better of the two. My "other" vote goes to the first two Thief games. Thief 2 was the best there. It's hard to pick a favourite between the Hitman and Thief series, because they're quite different.

I've played MGS1,2, and 4, but not 3 yet. Waiting for the HD collection to be released in my territory.

Well, my vote goes to "other": Thief series. Thief 2 is the peak of this series with excellent stealth gameplay which can hold up to most modern stealth games.
I second this, Garret would NOT be pleased by the lack of his adventures.

No Thief? The Thief series and Hitman Blood Money are in my opinion the best stealth games. I did enjoy MGS too though...

Why Pandora Tomorrow? Chaos Theory outclasses all other Splinter Cells. I enjoy Conviction more, but it's not much of a "stealth" game. Chaos Theory has fantastic enemy A.I, graphics that outclass many modern games, a superb soundtrack that EXACTLY matches what's going on screen, well-designed levels, all sorts of fun new features like hacking, and a much improved melee system.
