I'd like a zombie game where a single bite = you're fucked. Maybe set in an open world, just trying to survive the apocalypse. Making fortifications, trying to rebuild society, fighting off raiders and looters that sort of thing.

Dinosaurs. Definitely. King Kong was awesome purely for the FPS missions against them (and rampaging as Kong I guess)
