Starkiller was doing it before he had any tutelage, though.

The simplest explanation, really, is that Lucas did not conceive a world where Jedi had such awesome powers. I mean, we could say that the technology wasn't available, but the X-Wing was clearly intended to be an epic feat. Which he later pissed on.

People built on what Lucas had conceptualised, and 20-ish years later, there was enough to work with so that when the Prequels came out, there were awesome powers. In fact, I think the general population would have been let down if Lucas hadn't at least met the standard of more recent sci fi flicks.

I mean, Vader was supposed to be a skilled swordsman. You compare him to Anakin, and there's no way the one became the other. Vader was as Lucas intended him to be back when, and it wasn't a problem until the prequels came along, because these force wielders were still the scariest things in the Galaxy. Vader my have prosthetics, but from what we've seen of that universe that shouldn't slow him down. It also doesn't stand to reason that Vader and Obi-Wan changed in the same ways.

I think in-universe, the best explanation for Yoda was he was in hiding for all that time. Proably didn't keep in practice with his X-Wing lifting, but the larger issue is that George Lucas built a 21st century expansion on a 18th century home.

On the other hand, I like the lightsaber bits from the prequels, they're just not in sync with what he'd already showed us.
