No one could effectively explain this if they tried. Even Charles Darwin himself must have had trouble with this question as well.
Organisms don't evolve while they're alive, evolution usually comes about through mutations in amino acid sequences in gametes. If a certain mutation appears to be beneficial, that trait will become more common. So at one point a bird that vaguely resembles a chicken would have laid an egg that would have hatched into what would be recognised as a modern chicken.
