I play piano and used to play guitar and honestly the paino translates WAY closer to guitar hero then the guitar. lol

Expert Guitar/Bass most of the times. I have something like five songs left on guitar hero 3 that I haven't beaten on expert yet because I really don't care that much about passing all of the songs, I just like to have fun with my game.
Drums I tend to play on hard, but there are some songs that I can't get the rhythm to so I play on medium and some that I find the rhythm real easy and play on expert. Its really wonky. Want a more fun one? I can only beat La Bamba on drums when it is lefty flipped. Don't know why.
I tend to sing on Medium. I can sing on Hard, but not reliably, so its either pass with 70ish% or pass with 96%, gotta go with the high A.

I only play guitar and can play expert on all versions except for GH III
I haven't played in a while though so I may be a bit slower now

Depends. What difficulty are you playing at and trying to move to? If you are trying to move to hard, one tip I heard was to play medium without your pinky so you get used to moving your hand up and down the fret with the easier notes.

Medium. I can play hard fairly well on Rock Band because of how the guitar is designed, but I would need to grow an extra finger to hit Guitar Hero's orange button.

Expert for bass, guitar between hard and expert, depends on the song.
Drums generally on expert and vocals from hard to expert, again depending on the song.

A bit tricky question generally speaking. I think that I can master the vast majority of songs on Hard but some songs can be real show-stoppers (like Fight Fire with Fire by Metallica and bloody Through the Fire and Flames by DragonForce). I can also 5 star a good number of songs on Expert assuming the songs don't have huge and fast solos or tricky riffs. All these on guitar. As for bass, almost always Expert but again, showstoppers appear (B.Y.O.B. comes to mind.)

As for how to become better, practice makes perfect. If you want some specific tips, I'll give you some.

1) Use your index finger for both the green and red notes. In case you have to press a green/red chord or gree/yellow, use your index and middle finger. Just watch it when songs start throwing triple chords. You esentually have to learn to move your fingers up and down.
Thus index=green, red, middle=yellow, ring=blue, pinky=orange.

2) Practice hammer ons and pull-offs. While they may not have been necessary on Medium, they are definitely on Hard and Expert.

3) When you press two or more buttons, only the highest one counts. So, if you hold green+red together it counts as red and green+red. This can be a useful technique on solos.

4) Learn how to up/down strumming. Some songs can be absolutely ridiculous when it comes to tossing down trails of notes (Knights of Cydonia comes to mind). So unless you want to tire out your right thumb mighty fast, do up/down strumming.

Like I said above, practice makes perfect. Unless you practice the songs, you won't go anywhere. These tips are useful but meaningless without practice. And trust me, Hard is doable. When I first tried I said: "Jesus, how the hell are all the others talking about playing Hard and Expert like it's so easy?" Now, I find songs on Hard to be slow at times.

Expert. Started playing April last year on Easy, went to medium. Then World tour came out and got it 1st day. I found medium too easy (100%) so i went to hard. The i got Rock Band earlier this year and got 100% on hard in that, so i moved up to expert. From there, i have revisited all the other games and beaten the songs i struggled to 5 star on the lower difficulty with ease.

The way it works is just so damn satisfying.

I play Bass on Hard/Expert and play Guitar on Medium because I'm crap when it comes to chords.

I don't actually have it, but when I play it at my mate's place I usually go on medium, sometimes hard; I'm alright

Expert. Like Hyperactiveman said, up&down strumming is a MUST; there's just no way you'll be able to keep up with some of the songs without it (e.g. Misirlou, Snow, One, et al). Also, get used to hammer-ons/pull-offs as they are amazingly useful when done right.

Other than that, though, being able to hear the song helps tremendously, as Expert makes you play EVERY SINGLE NOTE in a song (sometimes even notes that are from different instruments; I'm looking at you, Through the Fire and Flames).

Having an actual sense of rhythm is a massive help as well, as you'll be able to understand the timing of the notes better.

Expert.

And the only time I play Guitar Hero is when I've rented their latest pointless sequel that serves only to further rape and defile the brand. (Or when I'm feeling nostalgic and play the last good GH game, Guitar Hero 2.)

I play Rock Band every day, though. (On Expert... aside from final-tier drum songs.)

I haven't played it in ages, but I usually played on expert, I actually found it bizarrely easier for most songs, although the last few levels of GH3 did manage to screw me up.
