It's really hard since PS3 has so many exclusives, but I guess it's a tie between Uncharted and God of War. Love both franchises very much.
As far as Play Station franchises go, Jumping Flash > Everything. With twisted Metal in a close second.

gran turismo is sweet
until you realise its a lot of grind, ground up into a paste and added into some fuel for your lovely bubbly cars.
the grind is very apparent when at least 2 races in GT4 required player input for an unskippable or saveable period of 24 hours!!!! (although in fairness you could let the computer drive your car and as a result fuck you startegy right up)
did i mention i loved the grind

I used to love Jack and Daxter, but haven't played any of the games in quite a few years. Metal Gear is a favourite of mine. Also, can we consider Ico/Shadow of the Colossus as a single "franchise?" I know they aren't sequels of one another but many consider them to be linked in terms of tone and gameplay.
Makai Kingdom. It's my favorite NIS game to date. ...Disgaea 4 might change that though. We'll see.
I'm noticing a distinct lack of Wipeout in this thread. It's by far my favourite racing game, and bar a few dalliances in the early years on the Saturn and N64, it's only on the Playstation.
