I realize there's lots missing--Ghouls 'n' Ghosts, Strider, The Legend of Zelda: Oracle of Seasons/Ages, Viewtiful Joe, etc.--but I tried to pick games that 1) were their most critically acclaimed, and 2) that people are likely to vote for. Also, most of their major series have a representative--so if you're a fan of SFIV, you may feel comfortable voting for the second one.
I go with Resident Evil 4. The meticulous rationing of ammo, deliberately disabled controls and herd-or-be-herded mechanic, plus its unabated tension all built up to one, if not the, greatest shooter ever; one that may not be "survival horror" but is surely "survival tension", and makes good on the series' original goal--to synthesize, and one-up, western influences.
