The Witcher II is easily the greatest title of the four you picked, though if you're not a fan of WRPG (uggh, I hate the "western qualifier" - a rant for another time) it might not be particularly enjoyable. The game is full of fantastic moments, choices that matter and moral ambiguity. The combat is vastly improved from the first game and the visual design of the game is simply staggering. My favourite has to be the monsters.

As for your question about it's difficulty; it's not particularly difficult and it does have a setting for it. The Enhanced Edition patch/release helped fix the more frustrating, unintuitive parts of the game. It's well worth playing.
