I have to jump on the Picard bandwagon as well, although I wouldn't mind serving under Sisko or Archer either. I wouldn't mind Kirk too much, but I'd probably be a Red Shirt and be killed of on my first away mission.
Picard was a Hippie, Sisko was just wierd, Archer was a franchise-killing 'tard and as for Janeway? Yeah, let the woman drive and end up on the wrong end of the Galaxy ffs! (j/k)

Archer, hands down. Partly because there is a 50% chance that I would get to be a MEKO with an awesome rifle and high life expectancy (compared to the redshirts that died in droves in the original), and also because that ship seems to be able to take a hell of a lot more punishment without crapping out. And I could introduce the tractor beam concept to trip. Or I could be crewman Daniel's roommate and use his wall-phasing device to get late night snacks!

Picard, the most rational of captains, is easily the best choice. The other captains would get you killed much quicker; especially Kirk, he'd send you to your death on some bs mission against some kind of bizarre lizard just to satisfy his lust for the green space babes.
