Oh, how about non protagonists? I'd go with my avatar - Vorador.

the guardian of the elite club of superhumans in Nosgoth - the Circle of Nine. Also, Malek is part of the Circle with his whole purpose being to guard them. Vorador went and casually killed six of the nine guardians, not because he planned it years in advance but on the spur of the moment because he was
pissed (not drunk). V-boy there killed only six because the others weren't around. Later on, Vorador made Malek his little *****. He also happens to be the oldest (human) vampire in Nosgoth. Forget sunlight - that ain't a problem for him. Water - maybe, if he doesn't teleport away.
I doubt the other settings can pull out a magical vampire stopping stone. Shepard, if he/she faces Vorador, can only beg him "Oh, please mighty Vorador, please don't flay my skin with a mere gesture" because he can do it.
But how can Vorador adapt? Well, he has shown himself proficient in hiding, also he can just go and turn several people into new vampires, if need be, and raise an army, or at least a small vampiric society. Ah, also, Vorador can read minds by drinking blood - this is why he is one of the foremost Nosgothic historians (or at least "history enthusiasts").
