Counter-Strike let you change hands. I'm sure I've been ninja'd a couple of times already, but I'm too lazy to check.

I'm a left-handed sword fighter my self, and I have won several sparrings because of just that^^

It's not as easy as "just flipping it around". Animations often involve other models, both from the environment and other enemies/characters. You would have to re-do each one to make sure that it worked properly. I was playing my import copy of Monster Hunter Prtable 3rd earleir, and what do you know? Turns out all the characters in that hold their weapons in their left hand. and mo-cap and whatnot is not that big of a deal. all animators have to do is flip everything
You could in Counter Strike, and I am pretty sure you could do so in Bioshock too. I dont see how it can affect the gameplay though. What? That's just balls, there's always been left handed sword fighters.
