The Water temple was the most interesting well-thought out dungeon in the entire game?

Hmm. To me it seemed a bit convoluted but to each his (or her) own. I still don't see why you didn't think the rest of the game was good, though. Almost every aspect of that game was great to me.

It's also a good series.
