Parmesan. I eat it as it is. Cheddar is boring and simpletony.

Can I ask how you eat parmesan on it's own? I grate a bit over spaghetti... but even then it's too strong.

This may sound a bit weird but I eat it once it has gone rock hard. it still has distinctive taste but it is not as strong.

Maybe I should try that...

Gouda! I guess Edam is close but, what the hell. Cheese is one of those things that I really enjoy but rarely eat. I blame the crackers. There is no one cracker that goes well with all cheeses.
