A lot of people have already said it but the Uncharted series is a must own, single player is amazing and it has really solid multiplayer.

I don't personally own a PS3 but I'm saving money for one so I can play a few exclusive games I've wanted to play:

God of War
Heavy Rain
Flowers
Little Big Planet
Folklore
Metal Gear Solid
Infamous
Journey

Besides, the PS3 got Singstar, which is a waaay better game than Lips (the 360 alternative) and Singstar is something of a favorite at parties among my friends =P

I admit I don't have a PS3, but one of my roommates had one while I was at university.

I got the chance to play Valkyria Chronicles on it and really had a lot of fun with the game. If I had a PS3 or it were available on PC I'd buy it in a heartbeat.

Uncharted 2 deserves an honourable mention but I wouldn't call it must own.

Personally, I loved MSG one and two, three was OK, four.... was not so good. Terrible, terrible, non-sensical, self-indulgent cut scene after cut scene.

Edit - Children of Eden is really good.
I admit the cutscenes were overly long but if you've payed attention to the story across all of the games they were actually quite good. Although I sometimes forgot I was playing a game xD

Persona 3: FES, a fantastic JRPG, just became available on PSN.

Get it.

Now for a real list (All exclusives):
Uncharted 2 & 3 (Cover shooter with Indiana Jones feel)
Ratchet & Clank: Future: A Crack in Time (Platformer with crazy gunplay. Weapons level up as you use them. One gun even plays even plays the 1812 Overture while you fire it. Insane.)
Infamous 1 & 2 (Electric super hero games)
Disgaea 3 & 4 (Very hardcore, turn-based, JRPGs with hilariously awesome stories)
Metal Gear Solid HD Collection (Classic movie collection with stealth sections)
Killzone 2 & 3 (First person cover shooters. Very pretty looking.)
Demon's Souls (RPG with a Dungeons and Dragons feel, very unforgiving)
Resistance (FPS, the PS3's version of Halo)

Valkyria Chronicles (if you end up with a PS hand held look for VC2. It fixes some of the mechanical issues of the first [saving and loading during combat I'm looking at you] even if the battles aren't as grand as the original)

OT:
Little Big Planet(1 or 2). - It is AMAZING.

Resistance Series is rather fun, but it isn't stellar.

Killzone 3 multiplayer component. - My FAVORITE multiplayer game at the moment. You can either go buy the whole game, or just pick up a free demo of the multiplayer (up to lvl 10) on psn. After you reach level 10, if you buy the multiplayer (14.99usd) you get extra points and double exp for 24hrs.

Infamous 1&2 aren't too shabby either.

And those are my essential choices. For PSN games I'd make a more extensive list.
Damn. Yeah... That's, uh, that's pretty much everything. PS3 owners are set with a collection like that.

Valkyria Chronicles is the only essential game on the PS3 but thats me being real picky there are lots of other great ones on it but none that match this game IMO.

I would say though that Valkyria Chronicles is my second favourite game of all time so I am probably overhyping it but if you own a PS3 it deserves a try at the very least.

Metal gear solid has some pretty amazing gameplay that caters to both shooters and stealth gameplay mechanics with an... interesting story. just dont expect to jump into the game (any of them) and expect a coherent storyline. the ideas, characters, and intertwining of past and future events blur together into a blurry mess. all you need to know is that in every game there is a bad guy, he has a super weapon (usually a mech), and he has a team of super people that try and kill you one at a time

while the story is a mess the gameplay more than makes up for it

i would also recommend playing the god of war series. while the final ending is a little cheesy for GoW3 the story and the fighting mechanics, story, and puzzles are very enjoyable
