Definatly Higurahi no naku koro ni. A beautifully made anime with a really good story told in a pretty unique way. And it is definitely a mind fuck. It is really good at making you paranoid and doubtful at everything.
My absolute favorite anime.
This website even did a review on it

Go for Ergo Proxy.
I would say this is a safe bet.
Thirded. Pino is probably the most interesting character in it.

Also, Noein, though it doesn't really qualify as a 'psychological' one, but still fun to watch.

EDIT: Oh, and forgot Gunslinger Girl, though you need to be REALLY patient to be able to watch it. 10 second silences with pretty much still frames occasionally happen.

Code Geass. The mindfucks in that anime will spin your head to Saturn. That's 50 episodes worth of mindfucks. And in the second season they're even more epic.

I already mentioned "Welcome to the NHK", but I forgot to mention "Clannad" and "Clannad After Story". Those were very, -very-, good.

As usual, I say Bokurano. The overall plot is pretty screwed up, and by "messed up" I mean a bunch of 14 year olds learn insignificance of a human life, while at the same time being forced to pilot a giant robot at the cost of their lives.

And although it's not very psychological (unless you consider an anime that makes you cry like a baby psychological), Clannad and Clannad After Story are still my favorite, so I recommend them.

Monster.
Ghost in the Shell SAC and 2nd GIG.
Case Closed.
Jin Roh:The Wolf Brigade.
RahXephan.

All of these are good Psychological Anime.

Though case closed is a Mystery Series, it can get crazy.
Especially the Manga.

Monster is a good psychological thriller type anime.
Would you mind if you told me how many episodes does every anime have please? It would be nice actually, since every anime you have listed seem interesting!

I don't understand how people think that Evangelion was that big of a mindfuck. It was pretty simple really. It was well done and paced, but the plot wasn't hard to follow and the twists were not so far out of the ordinary that I was actually surprised by them.

If you want a good anime with some psychological elements I recommend Darker than Black.

Monster has 74 Episodes and 18 Manga Volumes.
Ghost in the Shell:Stand Alone Complex has 26 Episodes, 2nd GIG has 26 as well, i personally like 2nd GIG better than the first series.
Case Closed has 585 episodes and the Manga has 69 Volumes.
RahXephon has 26 episodes and the Manga has 3 Volumes.
As for Jin Roh, its actually a movie but a defiant must see.

I haven't really liked long animes, particularly the ones that are over 50. I think I will check out Monster, but I doubt I will see Case Closed.
Thanks anyways!

No problem.
I enjoyed Case Closed but yea it is way to long.
Monster is great but can get boring at times.
It tends to progress slowly from time to tome.

Though i highly recommend Jin Roh and Ghost in the Shell:SAC 2nd GIG.

Hope you enjoy what you decide to watch.

Welcome to the NHK and Paranoia Agent definitely top my list.

I didn't even make it halfway through Paprika... it freaked me out too badly. Then again, I love my straightforward, pure shonen anime. (shh.)

"Welcome to the NHK" has 24 episodes
"Clannad" has 22, but then it has two OAV's
"Clannad After Story" also has 22 and two OAV's

The OAV's are basically re-caps, worth the watch. The second "Clannad" OAV is an alternate story altogether, though.
