I've only played the PS1 version but apparently it has extra content on the N64.
Plus you can't turn down the awesome soundtrack.

Here's some games that haven't been mentioned as much, but are still a ton of fun.
Extreme G. Take Mario Cart. Replace Carts with motorcycles, turtle shells with heat seaking missles, and the Mushroom Kingdom with futuristic offworld racetracks. Add in awesome techno soundtrack. Be warned though, this is a hard game.
Wetrix. An odd puzzle game. You get different shaped blocks to build walls on your map. Eventually, it starts raining, and you get some water blocks. If too much water leaks off the edge of your map, you lose.
Blast Corps. A truck carrying a nuclear reactor thingy has lost its brakes and its ability to steer. Destroy everything in its path to make sure it doesn't crash. The only game to this day that I have in which you can power drift a Tonka Truck to smash a gas station, and use a flying robot to curbstomp a skyscraper to the ground.

Also, if you like arcade games, RAMPAGE is fun. You're a giant monster, go and level everything!

Paper Mario, I have yet to find a game that made me laugh like Paper Mario did (The portal series is the only thing to come close). Easily in my top 10 favorite games of all time. I have yet to find a better example of a game not taking itself seriously that is done so well. Also have to give props to the gameplay. The addition of simply pressing A at the correct time for extra damage or to prevent damage done to you makes the turn based combat never feel old, reused, or boring. One of those games marketed towards children, but was designed for adults.
