well if you want slow epic guitar solos you may enjoy Joe Bonamassa. He's contemporary blues.
A good example. 2:50 if you want to skip right to it but it builds up the entire song.

Now his guitar solos never reach the epicness of some others but I figured it meets your slow amazing guitar solos requirements.

I have one. It fits your criteria perfectly and luckily it was recently voted the greatest solo of all time by guitarist magazine readers. http://www.youtube.com/watch?v=lwhbcdbkeXY The solo is at 4.35 but I really recommend you listen to the whole track to really get into the ambience of the song. If you do, the solo is nothing short of a religious experience. I know, I've seen it live :D

For a song that will surprise you several times, I recommend all eleven minutes plus of 'No Stone Unturned' by Heathen. The solo is outstanding. See also 'Ironbound' by Overkill for one of the most 'did not see that coming compared to the rest of the song' solos you'll ever hear.

I know you don't usually think of this song for guitar solos, but "Comfortably Numb" has some of the most lyrical guitar playing of all time.

A guy at my highschool played this song for level 3 solo.

He was pretty good, but Satriani does it best.
