Some suggestions:

Base building games (games where you build a base, gather resources and then start producing your forces): Starcraft, Warcraft III, The command and conquer games, Supreme commander, Total annihilation

Combat resource management games (games where you try to use the limited resources that has been given to you the best you can instead of building bases) : Dawn of war 1 & 2, Company of heroes, World in conflict

Country/Empire management games (games where you control an entire country or empire): Empire: total war, the Europa universalis games, the Hearts of iron games, Victoria: Empire under the sun, Civilization 4, Sins of a solar empire, The Master of Orion games

Combat simulators (games where you control an army or a small group of soldiers in a more or less realistic battlefield): The close combat series, Men of war

Non-combat related strategy games (games that has no or little fighting in them): Tropico 3, The Sim city games

If you'd be fine with Turn Based Strategy, might I suggest Fire Emblem 7(just Fire Emblem stateside) or Final Fantasy Tactics, as they are both amazing games. Real Time Strategy... uh... sorry can't really help there... Red Alert 3?

Puzzle Quest if you have a PSP, though it gets ridiculously frustrating at points cause the AI is "cheap".

My very first RTS was Age of Empires. I hear the second and third are just as good/better.

My favorite right now is Sins of a Solar Empire, but that's not overly accessible.

A nice simplistic and fun one is Eufloria. It's great, and you can get it on Steam.

Also, StarCraft is great.

EDIT: And Tom Clancy's EndWar is really great.

Civilization Revolution is a great turn-based strategy console game.
Also, what exactly is StarCraft? I've heard about it countless times, but never really understood it.

Age of Empires 3 is alright, I suspect half the reason it got so much hate is simply because the expectations were so high for it. Not great, but not bad either by any means.

Age of Empires 2 though was beyond a doubt the high point of the series and easily one of the best RTS ever made. Hell, it's still fun to play today and looks good with crisp high resolution art and good attention to detail.

For modern rts however I'd say Company of Heroes is king of the pile and certainly worth a look. If ya want more rpg/tactical style combat Dawn of War 2 is also excellent. And if grand scale rts with hundreds of units is yer poison of choice can't go wrong with Supreme Commander.

If you're into turn-based strategy then Civilization 4 with it's expansions is a solid investment sure to waste hundreds of hours of your life away... but my personal pick for top dawg goes to Galactic Civilizations 2 and it's expansions. The game is just so vast and so awesomely awesome I can't even grasp it's awesomeness. But that's just me.

It's an RTS by Blizzard famous for it's three different races and it's remarkable sense of balance and style. Each of the three races play hugely different and boast completely unique units and technologies and yet none of the three can be called the best, which makes it the perfect multiplayer RTS in many respects for those with twitchy fingers and a fast mind.

Add to that the cool story and amazing cinematics like the one above and you've the RTS genres most legendary entrant. Very cool game!

Fire Emblem and Final Fantasy Tactics were both easy to get into and fun to play, they are the games that got me into other strategy games. In terms of RTS Starcraft was pretty fun for a while, same with Age of Mythology, both of them are great games.

3. Defcon

While supreme commander has a slighttttly steep learning curve (unless you've played Total Annihilation), these 3 are the most fun RTS games I've played for being on the more simple side of things.
