I recently watched Steins;Gate. I would have to say that it's one of my favourites. It's a sci-fi thriller, though there's not much in terms of action sequences. Don't watch its predecessor, Chaos;Head, because it's really not good, despite a relatively interesting first episode or two.

Code Geass is really good, too, for sci-fi and action. The first season is far better, but the second isn't as bad as some would say.

Puella Magi Madoka Magica is also awesome. Don't be deterred by the whole magical girl thing; it's much, MUCH more than that.

Some of my other favourites, including things that you might not like, so look them up if you want, include:
Durarara
Baccano
Angel Beats
Clannad
Gurren Lagann
Nichijou
Kino's Journey
Higurashi no Naku Koro Ni
Pani Poni Dash
Persona 4 The Animation
Shakugan no Shana

Have you watched Higurashi no naku koro ni (When the Cicadas Cry, or just "when they cry")?

*shudders*

It's good.
Nope, that's a new one to me as well. I'll look into it. So many great ideas in this thread!
Try not to be put off if the first episode or two isn't your cup of tea, by episode four it is quite gripping.

Also, it isn't exactly like the other things you've mentioned, but if you like comedy with a dash of action, Gintama is great for how weird it is and focuses on messing around with cultural norms. If I remember right, it doesn't have arcs, when there are they didn't go beyond 2-3 episodes... you'll find each episode for all of its wackiness is really heartfelt, so I'd compare it to trigun or cowboy bebop in that aspect. They are different creatures, and not everyone's tastes, but I remember enjoying it until I had my fill.

Given the ones you say you like I'm amazed no-one's mentioned Outlaw Star yet.
That'd be my top recommendation based on your preferences.
I'll second the recommendation someone else put up for Vision of Escaflowne.
With you having liked Macross (Yay!) I'll throw in recommendations for
Martian Successor Nadesico and Irresponsible Captain Tylor.
Aaand, you might give Saint Seiya a try--I really wouldn't recommend it for
most people, but you don't seem to mind more 'dated' anime, so it's worth a
try....

This is awesome, I get to go nuts!

(The following list may repeat previously mentioned items. That's not because I didn't read the topic, it's because I'm throwing my support behind that anime. If I don't list something mentioned before, it's because I think it sucks...or I haven't seen it.)

Code Geass
Darker than Black (I like to think of DtB as The Escapist's Official Anime. Mostly because a certain member uses Mao as his avatar, but still.)
Fullmetal Alchemist / Fullmetal Alchemist Brotherhood
Gurren Lagann
Mirai Nikki (AKA Future Diary) (not really sci-fi or fantasy but...damn)
Mobile Suit Gundam 00
Neon Genesis Evangelion (Although based on your list I'd expect you to have seen it already)
Puella Magi Madoka Magica
Psycho-Pass (It's currently airing. Incidentally, it's written by the guy who wrote Madoka Magica.)
Steins;Gate

I could list more stuff, but that's about all I can think of when I limit myself to sci-fi/fantasy that I really like. And I think you've got enough recommendations, so I don't need to muddy the water.

You might like what seems are most critics top pick for 2012, Sword Art Online, a high fantasy adventure of protagonists stuck in an MMO with high stakes and fine character development. it's quite a joyride. And if you haven't seen them Last Exile and Evangelion for sure. Probably the bests but I assume you've seen at least one of them.

I would like to put forward a little bit of a different anime called

Steins Gate

Watch two episodes and you'll be hooked. There are 24 in total so its relatively short but its one of the best animes I watched last year. I'd explain the plot and what its like but I really wouldn't be able to do it justice. Start watching it and at the end of the first episode you'll probably be thinking "Wait what?" and be compelled to watch the other 25.

Edit: DAMNIT ninjaed by the person above me.
I dld steins gate a couple days ago but couldnt get past episode 1, but that's prob from fatigue since I had just finished SAO, I'll check it out!

Very few critics would call SAO anything more than decent, although they would probably still be kinder to it than I would. You see, the majority of critics have these things called "standards" which they adhere to, while most people have neither the obligation nor the intelligence to have standards.

God I need to cool down and stop hating SAO so much. It's not that bad.

It's worth it. Steins;gate is the best show I've watched in a while. Have only seen the sub, so can't tell you if the dub is any good.

Watch Fullmetal Alchemist: Brotherhood. I'm not a big fan but that show is just fantastic. It's got great characters, interesting and engaging plots and the occasional bit of fan service. It's everything you'd want in an anime and more!

Tengen Toppa Gurren Lagann. It's a mecha show but the scale rapidly increases to the point of hilarious absurdity. It's definitely good fun!

*insert obligatory Sword Art Online recommendation here*

Aside from that, To Aru Majutsu no Index is amazing. It's spinoff, To Aru Kagaku no Railgun, is also great.

Dude I like how your tone went from downright acidic to conciliatory that you might just be ragin a bit too hard. Threw me off. Well I can see why people might think SAO is bad kinda like people think code geass is (as both are in a sense such a spectacle). Maybe your right about the critics, but all the one's i looked at had it at 1 or like in the top 3. Maybe it was a slow year. Either way, I really enjoyed it and didn't know of it's ridiculous hype going in which might have made me like it more. What don't you like about it?

That's ok, I'm starting to prefer subs for the most part this past year anyway, since funimation has become too dominant resulting in too few voice actors. I'm on 4 now it's pretty good but I'm assuming it's going to pick up the pace and become way different soon

Funny you mention Code Geass, since it's more or less my favorite anime.

Without the hype, it would be one of a zillion '6/10 watch if you literally have nothing else to do' anime that come out every year. With the hype it's male anime Twilight.

It completely failed to make me connect emotionally to any of the characters at all. I remember when the MURDER GOLEMS OUT OF FUCKING NOWHERE killed Kirito's party in one of the early episodes. I didn't care. At all.

I tuned out for a while, skipped one or two episodes in the early teens, and then I watched episode 14.

It turned out I wasn't the only one who didn't care. didn't care either. I think he just has a giant roulette wheel with plot events written on it and that's how he decides what happens.

Then Alfheim Online happened. That should be fairly self-explanatory. Nonetheless, I'm looking forward to watching the last two episodes tomorrow at anime club. I've heard terrible things about the ending, so I think I'm going to enjoy it.

Usually when someone asks me to recommend an anime I always say "Trigun" but you've got that down already.

Sword Art Online and Btooom! are both fantastic animes.

Er, yeah, that's about SAO. There wasn't exactly a transition between those two thoughts, was there?

Code Geass's writer probably also had a roulette wheel, but his was labeled with the numbers from 100 to 1,000,000 and it determined what percentage of CRAZY FUCKING AWESOME each episode would be made of.

Tru dat. I'm a pretty big Code Geass Fan myself, my love for the show almost entire coming from Lelouch and his relationship with suzaku.

I see you're new here, so I won't explode at you, but for future refference: these "Recommend me anime" thread show up once a month.
So please try using the search bar. The Escapist is pretty relaxed about this, but this kind of thread is constant.

http://www.escapistmagazine.com/forums/read/18.397432-The-Anime-Megathread
This is the link for the Escapist mega-list. Check the OP and comments, along with other threads on anime for suggestions.

I'll also second any recommendation of Code Geass.
