Darn, everything I was going to recommend has already been mentioned, but I'll say it anyway.
Baccano!
Cowboy Bebop
Gurren Lagann
Soul Eater
Puella Magi Madoka Magica (in case you can't tell from my avatar, this one is my favorite)

Yes I'm being 'that guy' but come on, seriously?

The repetition huuurrrttsss:'(.
Though the other one is basically "recommend a shonen anime" though it seems like 75% of the people didn't read the OP's post of his criteria in that thread and just listed anime they liked.
What's a shonen?
Well, it's spelled "Shōnen" but I can't type that crazy ō without a lot of effort. It means something tarted to males 10 and up. They're by and large your action animes, like full metal alchemist, dragon ball z, Bleach, etc.

What type of genres do you like to watch?

Sci-fi
Action
Romance
Psychological
Thriller
Horror
Etc...

If you're not going to narrow down your preferences it would be quicker and easier to simply search other "recommend anime" threads.

The sad part is that my girlfriend probably knows both of these.

And she thinks I am weird because I enjoy live-action porn D:

Well then.
This is my kind of thread.
First, this:

Take that with a grain of salt as there are some missing.

As for my personal recommendations, There is:

Neon Genesis Evangelion
An angsty sci-fi set in the near future featuring giant bio-mechanical war machines punching things.

Gurren Lagann
An incredibly over the top action-sci-fi featuring big robots punching things, bigger robots punchings and robots the size of galaxies punching things.

Kaichou wa Miad Sama!
A romance/drama slice of life detailing the relationship between a girl who hates boys and a boy who is infamous for rejecting girls advances.

Each of these are my personal favorites.

EDIT:

Almost forgot:
5 Centimeters Per Second
What can I say about this.
It is one of the most bittersweet romance movies I've ever seen.
I cry every time I watch it, and I love it.
I agree with this list (as far as the animes I have watched, anyway) I'll add my word to find it easily again, for you made me curious. :)

I'll throw in my two cents and recommend a fairly old one - Vision of Escaflowne. Sort of a fantasy/mecha/war epic kind of thing.

I'm not much into anime - partly due to lack of access, partly not having any time, partly because I've found so much of it disappointing. So take my opinion for what it's worth - I'm hardly in a position to call myself an authority on the genre and I guess I'm not really a fan of it either, but Escaflowne remains one of my favorite TV series overall.

I thought Evangelion was pretty interesting, too, and it's one of the few anime series I've watched in its entirety. My advice, though - there's a lot of filler. Like, a lot. You'd think 26 episodes would preclude filler episodes, but it manages to include a lot of meaningless moments. Unfortunately, the plot-related scenes are interspersed with the filler, so it's kind of hard to filter out the lot. And strangely, they still needed to make a movie to film the actual ending to the series. And the movie is necessary - in fact, it's pretty much the most important part to tie the entire series together. I've read they ran out of budget in the series, but the cynic in me calls bullshit - they simply realized the money-making potential if they ended the series on a cliffhanger and released a full-length film. Because the series' ending is pretty necessary too, in order to tie up important character arcs.

(Edit)
Just an additional clarification - there are two "Escaflowne"s - the series and the movie. Watch the series. The movie is sort of a reboot of the series, involving the same characters and names, but none of the same plot, themes, arcs, style - it's like the original, but set in a different dimension, full of teen angst and pointless difference and bizarre design choices. It's like a fanfic got switched with the real script. The movie is bad, is what I'm saying. Do not watch the movie.

Holy cow, I have stuff no one's mentioned yet! That almost never happens!

One Piece
(so far 558 episodes, action, comedy) Probably not everything it is, but it's about a guy who wants to be the Pirate King in a world of pirates. Doing so involves a long journey; comprised of making new friends, new enemies, and a lot of jokes, action, and a little bit of drama. I laughed, I cried, and I got pumped up by the action

Toriko
(so far 66 episodes, action, comedy, food) In this case food is a defining feature of the series. The basis of the world is food and has ridiculous action, a good chunk of comedy, and a save-the-world sort of plot. Have a snack handy when watching it.

How's that sad? Are you saying it's sad to enjoy yaoi? Are you saying it's sad to find Ritsu Onodera insanely cute? But yeah, it is sad that she finds porn weird.

That "sad part" is implying that she's watched A LOT of it :p

I actually like these threads because I get to find some anime I wouldn't otherwise find out about. I've watched something like 85 days worth of anime, so I've exhausted a lot of them. Anyway, on to my favorites:

Full Metal Panic!(and FMP Fumofu, and FMP TSR)
Rurouni Kenshin (the first arc, the second is meh)
Trigun
Angel Beats
High School of the Dead (yes, yes tons of fanservice, but I really liked it!)
Air Gear
5 cm per second
Another
C
D. Gray Man
Fate/Zero, Fate/Stay Night
Guilty Crown
Initial D: Third Stage
Steins;Gate
Summer Wars

Wow that list was long. But I count them all as favorites
