Shooter
Inception

I...uh, haven't reviewed the last two yet, so I can't link to why I recommend them. Watch them anyway though.

1 from either Alien or Aliens

1 from either The Godfather or The Godfather Part II

1 from any of the Back to the Future movies

1 from any of Sergio Leone's spaghetti westerns

and just to throw a spanner in the works, The Thin Red Line
Well if he's never seen a movie before, I'd probably want him to see the first one of any of those movies. That way he's not saying "Wait.. what the hell was that?" the whole time. :p

Fight Club (To give him a revelation)
Old Boy (To give him a mindfuck)
Reservoir Dogs (To give him both progression, dialogue and violence in ways he has never seen before)
Castle In The Sky (To show the magnificence of Japanimation)
The Land Before Time (To show the magnificence of Don Bluth animation)

And I must say, it pleases me that a couple of these titles already got mentioned.

Star Wars, Casablanca, Superbad, The Good, the Bad, and the Ugly, and Heat.

Adventure, intrigue, comedy, suspense, and action. I think that should about cover it.

They've never seen a film before?
I'd pick some films with a simple yet elegant visual language, not something with hyperactive cuts, or that references other works.

Rashomon
The Third Man
The Searchers
Casablanca
Rififi

Good stories with compelling characters told elegantly.

Might need some comedy though which would mean either The General, or A Night at the Opera.

Some Like it Hot
Laura
Empire of the Sun
Lord of the Rings: The Fellowship of the Ring
Inception

That way they become steadily more impressed. ;)

Um... I would say Citizen Cain, Star wars, Indian Jones, Alien, and the lion king. I feel that's a fairly good mix.

Theres a lot of films id like to mention here but im going to try and vary the genres as much as I know them:

Fight Club (Because everyone should)

Human Traffic, Trainspotting or 28 Days Later (For the Englishness)

Madagascar 2 or, if failing that, any pixar film or dreamworks film that doesnt have a number at the end of it (For the comedy, and to see some animation)

Never Ending Story (To understand my childhood nightmares)

Alien or The Matrix (To get the majority of movie related jokes or spinoffs)

Unfortunatly there was a ton of films that should also be seen that are being missed (Any marvel film, all the batman films, kickass, zombieland, all the other dreamworks and pixar films that didnt get watched...)
