Fallout 1 and 2, they have probably been mentioned before but they are just than damn good that they deserve mentioned multiple times.

Rome/Medieval Total War

Hitman Blood Money (not sure if this one qualifies, it might be a little too recent.)

I can say thief 2 is the bestand source games are real easy to run usually.

If you wanted great nostalgia, then hands down Half Life every time, I haven't checked out the HD version for it, is it any good?
Other than that, I remember Jedi Knight: Jedi Academy was a fun game, quite buggy and AI was a bit dumb bit still great fun.
Rome Total War for the strategy category.
Or KOTOR, my favourite game of all time.

How old is your computer because a word of warning with all 3 thief games you will run into issues running multi core processors systems and a os above windows ME. There are however workarounds for these issues but just so you know they wont just be install and play games, however that said I dont know if the GOG versions have been optimized for newer systems I do know that the steam version have not been optimized for newer systems.

Freelancer - A deep, atmospheric and highly moddable space sim. A fantastic time sink.

LOVED Ghost Recon! I was bummed when the sequels removed the ability to play every member of your squad. I was impressed with the first game, how the PC and Xbox versions were pretty equal, except the first mission was minus one enemy tank.

Disciples I and II. Gog has them for like 5 dollars. Dark, gothic high fantasy turn-based strategy game with RPG elements. Very easy to pick up and quite long as well. Great value... great games.
