Noticed you've undulged in GITS (a rather unfortunate acronym *shrug*)
GITS2 is alright (very good looking, if a bit shiny tending towards fuzzy, but not anything to write home about)
"Cowboy Bebop: Knockin' on Heaven's Door" is nothing short of awesome (though it's better if you watch the TV series first, one of the few I wholeheartedly recommend) for having undoubtedly the best purely 2D animated aerial dogfight in cartoon history (my opinion, though I'm sure many will agree) as well as an excellent pacy story
"Akira" is OK as well (quite visceral, just soak it in and don't bother thinking about the plot)
"Sky Crawlers" is also nothing short of awesome for having an awesome 2D/3D mixed dogfight, might be a bit heavy though, deep-meaning-wise (actually a good analogy for the modern anime industry, unfortunately)
"Sword of the Stranger" is pretty good too, but once again don't bother too much about the story, the art is brilliant, the characters are simple but well explained/thought out, and the fight scenes (especially the final fight) are top-notch
And, it's been said before but, anything from Studio Ghibli (Hayao Miyazaki and Isao Takahata in particular)
