If you could possibly...if you have the time...please...

The only one's I don't like are high school romance ones (Ouran, School Rumble, etc.) and one's that are like old and grainy (Like DBZ or Evangelion)

If you could spare the time I would be very grateful ^^

EDIT: Forgot to put a list of which I've seen:

Naruto (In progress, upto date)
Bleach (Same)
One Piece (Same)
Reborn (Same)
Hajime No Ippo (Same)
Deathnote
FMA
FMA Brotherhood
Code Geass
Gurren Lagann
Full Metal Panic (All three versions)
Lucky Star
Azumanga Daioh
Blue Exorcist (In progress)

Trigun is good.
Gunslinger Girl is good and heartbreaking.
Spice and Wolf is like The Settlers of Catan as an anime, which sounds awful but is hilarious and awesome.
I got my mom to watch it, so there's something.
Fullmetal Alchemist is good.

..and whatever the other people here recommend.

Full Metal Alchemist. Just watch it, you'll like it. This coming from someone who generally doesn't like or watch anime that often.

FullMetal Alchemist. Both series are worth a gander (and it's worth noting that they're essentially alternate continuities), but I prefer Brotherhood over the 'original' (quotes because of its divergence from the manga due to the latter not having been finished at the time) series.

Also: Monster. While I've heard that Naoki Urasawa does good work in general (with 20th Century Boys supposedly being his magnum opus), that's the only series of his I've seen yet.

Suggesting things that haven't been suggested before on this thread (Because they're all great, watch them ALL)

Gundam Seed (I found it to be deep)
Clannad (Season 1 only, after story is too heart breaking)
Steins;Gate
Haruhi Suzumiya

Just to start with. Also, Future Diary looks to be pretty amazing when it starts soon

Remade evangelion into movies, but they're still in the process of doing it. Every movie is about 6-8 episodes condensed into an hour and a half of frantic action...I love it.

Just finished watching the first season of Berserk, but it's "grainy" so might not be to your liking. However, I DARE you to watch the first episode and not get sucked in.

If you want violence and cute girls, watch Eelfen Lied.

For an amazing story smushed into only 6 episodes, watch Fooly Cooly (FLCL) because the action is incredible when it happens and the story is pretty dang cool too.

Sorry to hear you don't like the original Evangelion series though, it's an awesome mind-screw of a show. I'll say it again; I love it.

Spice and Wolf
Spice and Wolf indeed. And anime that isn't 95% violence. I don't need all anime to be a DBZ slug fest all the time. Good characters and story. Also the second season, but it's only subbed. Still awesome though. (13 episodes a season)

The original Gundam Wing. (I don't remember much of it since I was a kiddy watching it.) (50 episodes if I remember right)

Eureka 7. (50 episodes)

Desert Punk. It's..... got quite abit of sexuality in it. So if thats not for you..... your still missing some good story and badassery. (24 episodes)

.Hack Sign is another anime with an amazing story, great characters. Theres little fighting but when there is the scenes are good. This also has probably the best soundtrack of any anime. (50 episodes)

These are my recommendations. Spice and Wolf, and .Hack Sign above the others. There're triple grade A stuff. But unlike some other super popular anime types (Naruto, Bleach, One Piece) They don't go on for 200+ episodes and are crammed with so much filler not unlike your Thanksgiving turkey. They go max to 50, I've marked they're length.

Enjoy them if you watch them. They're great shows.

Not that I don't like it. I don't like the visuals~. I've been buying the movies though, so I've been watching it through there ^^

You can try the remastered versions of Dragon Ball Z and Evangelion (i.e. Platinum edition).
There's also Ergo Proxy, Blue Gender and Black Lagoon.

Good! Good!!! But really, if you want a fast-paced and small series to mow through, I highly recommend FLCL. Hilarious and cute.

Black Lagoon, GunXSword, The Melancholy of Haruhi Suzumiya, Eden of the East. Three of my personal favorites, in no particular order (how much I like them is probably relative to my mood at the time).
If you're unfamiliar with them, I'll give you a brief description (and try to avoid any spoilers):

Black Lagoon is about a Japanese business man who is enlisted by a delivery service of dubious lawfulness, and, uh, a questionable code of ethics.

GunXSword is about a man in a swallow-tail suit attempting to find and kill a man with a clawed hand, but first must kick a lot of ass in order to do so.

The Melancholy of Haruhi Suzumiya is about an average Japanese high schooler who befriends the titular Haruhi Suzumiya, an eccentric, blunt, and ultimately odd girl, who also happens to be God. The episodes were (intentionally) released out of order, but you can find lists of them in the correct order online if you want.

Eden of the East is about a guy who has lost all of his memories (yes, that old trick). I won't spoil anything else because finding out who exactly he was held part of the intrigue for me.

...Evangelion is old and grainy? I dunno, but if you say so. If you only dislike it because it's old and not because you don't care for its content, than check out the Rebuild of Evangelion films: they are sort of a re-interpretation of the original series with much flashier animation and some 10 years of time to reflect. I still like the original series better, but these are really good too.

Anyway, I digress. Here are some cool recent stuff I've seen:

- Puella Magi Madoka Magica: Speaking of animation techniques, here's an example of what modern methods are capable of in terms of working with art and music to create an atmosphere. It has some problems with structure, the focus on atmosphere almost compromises character development in a few places, and I seriously suggest you skip the first episode, but this has seriously become one of my favorite shows of all time. Great writing, great plot, great characters, and a really great soundtrack.

- Eden of the East: Lots of anime have some pretty glaring holes in their structures, so when an anime so consistently suspenseful and engaging as Eden of the East comes along, it gets noticed. It's entertaining, and has some pretty nice social commentary as well. Certainly one of the more accessible animes that have come around in a while too.

- Cowboy BeBop: I just noticed you didn't mention this in the anime you've seen. Technically, it's from the year 2000, which means it's not in digipaint O_O, but it's probably not old and dusty enough to turn you away. It's anime canon for a reason: there is almost nothing quite as flat out cool as Cowboy BeBop. These are perhaps some of the coolest characters, the coolest plots, and maybe the coolest soundtrack that you'll find anywhere. There may be more significant and well made things out there, but man...
