Baccano! is the one I always reccomend. Gangsters, alchemists, a train, and a crazy bunch of characters, it's got everything.

I second the nominations of Cowboy Bebop, Rebuild of Evangelion, Angel Beats!, FLCL, and Monster.

Watch the two newer Evangelion movies(1.0 You Are (Not) Alone and 2.0 You Can (Not) Advance), they aren't grainy, and the second is one of the best movies ever. Although they still need to hurry up with releasing the 3rd and 4th...
Also, Soul Eater and Kuroshitsuji are pretty good, and if you liked Lucky Star you'll probably like K-ON! too

"Baccano!" You will enjoy this, it's a show about immortals, mobsters and immortal mobsters. It's 16 episodes and you'll wish there were more by the time it's done. Check it out, It's on netflix. Don't worry you'll love the dub. It's better than the japanese version (it's set in prohibition america so it's a natural right?) the actors are great and the american Ladd Russo, Brian Masey, steals the show. STEALS it.

Things you may not enjoy:

"Berserk." Blood, Plot, character development, intelligence, intrigue, dark fantasy, betrayals, european setting. It's a great show. One of the best I've ever seen, the series I love the most in my heart of hearts. But the anime is grainy for all but two episodes (which were produced with digital coloring, this was from that era around 2000 when comp coloring was replacing paint) and if you can't forgive that It'll sour you on the whole deal. But hey, try it.

"Spice and Wolf". It's a relax paced show and there isn't much fighting to speak of. It's mostly an economic detective show with some romance and fantasy elements. It's better than it sounds.

Thing is glass joe, I'm fine with these threads, well if people list their own tastes others can cater options that will be tailored to them specifically. Besides, if we were using one thread this whole time it'd be like six years old, 40,000 pages long, and nobody would ever check it.

Sayonara Zetsubou-Sensei. I love the art style, and it's got lots of WTF moments (in both good and bad ways). And the cast of characters is very....well, let's just say "diverse"...

I liked Elfen Lied. Can't for the life of me remember why, but it was gory enough at points to make me forget about the topless chick causing the damage.

...That sentence is actually a pretty good sell, now that I think on it...

I can make a long list of really good anime but if i were to recommend one anime to another person it would be 'Cowboy Bebop'.

Trigun-Very good action series that really picks up at the half-way point
Excel Saga-Awesome comedy, every episode is a whole new experience.
Puella Magi Madoka Magica-Really, REALLY good show, dark deconstruction of magical girl with good amounts of unsettling material.

Steals it? No he murders it, I mean that in the best possible way. Probably my favorite dub ever, the one time Brooklyn accents and the like are perfectly acceptable.

This one is AWESOME! Saw it, was hesitant at first, loved it by the end. Simultaneously kinda funny and lighthearted, then very emotional and bittersweet. If you wanna just go out on a limb and trust me, I recommend this.

Check out anime.reddit.com, they have recommendations sometimes and they're not assholes like /a/. However, if you do post a thread in /a/ (4chan, in case you didn't know), you'll get a slew of literally 50+ recommendation lists from all the folks who got trolled.

Evangelion? Old and grainy? Whut? Evangelion isn't that old, and the animation is great, especially the remastered version. Watch Evangelion.
If you consider Evangelion old you probably think the same of Cowboy Bebop, but I don't care. Everyone has to watch Cowboy Bebop. Old != poor animation. Often this is the case, but sometimes old anime can still have stunning animation (Cowboy bebop, vampire hunter D etc).

For newer stuff. Watch. Freaking. Redline. It's going to be released on BD/DVD outside of Japan very soon (or you could *cough* download *cough*). Redline is amazing. Don't let any prejudices you may have about this movie put you off, I expected to dislike this movie when I went and saw it but it amazed me. Watch in high res, on a big screen, with big speakers.

Ahem.
Other personal favourites include admittedly obscure series such as Ergo Proxy, Mushishi and Lain.
A few general recommendations are: Durarara, Sayonara zetsubou sensei, Summer Wars, Kemonozume, Ghost in the shell (movies and SAC), Casshern Sins, Gankutsuou, Excel saga, Shiki and Samurai champloo.

ACTION BASED (great story + great action):
*Pandora Hearts
*Trigun as previously stated is awesome though it is an older one
*Blood+ (vampire anime)
*Zombie Loan is awesome BUT BE WARNED it is not finished, they stopped at ep 13 and if you want the rest of the story you must read the manga which is ongoing
*High-School of the Dead is awesome but make sure you see the uncensored one.
*Hellsing (another Vampire anime)
*D-Grayman (but again, they stopped making it and it never really 'ended' but they did make over 100 eps and it doesn't end in the middle of a super cliffhanger plot line like zombie loan does)
*Ergo Proxy (Has a vastly different art style to most anime, more westernized but does look awesome)
*Fate Stay Night
*Witch Hunter Robin
*Black Lagoon
*Darker than black epic
*And yes, Baccano is epic.

FELL GOOD (great story, little action):
*Eden of the east
*Angel Beats
*Fairy Tail This does actually have quite alot of action but its the kind of anime where the good guys leave the enemy that was just trying to kill them alive so I'm putting it here
*Spice and Wolf

Anime filled with mostly random hilarity:
*Bakemonogatari
*FLCL (this one takes the cake so far as randomness goes)
*Elfen Lied (I know a lot of ppl would classify this as action but when the main character can instantly go from being amnesia retarded girl who makes Japanese cat noises to a cold hearted homicidal maniac who dismembers ppl I would regard this as random but no less awesome)

GOSICK
Gosick takes place in 1924 in a small, French-speaking fictional European country of Sauville nestled beside the alps. The story centers on Kazuya Kujo, the third son of a high ranking officer of Japanese Imperial Army, who is a transfer student to St. Marguerite Academy, where urban legends and horror stories are all the rage. There he meets Victorique, a mysterious yet beautiful and brilliant girl who never comes to class and spends her days reading the entire content of the library or solving mysteries that even detectives can't solve. The series mostly focuses on Kazuya and Victorique getting involved in different mystery cases and their struggle to solve them, at the same time forming important bonds with different people.
Fairy Tail
A 17-year-old celestial wizard named Lucy Heartfilia runs away from home to join Fairy Tail, a rambunctious wizards' guild whose members are infamous for their overly destructive antics. Along the way, she meets Natsu Dragneel, a boy who is traveling the land of Fiore together with his partner Happy, a cat, in search of his foster parent, a dragon named Igneel who had disappeared without a trace seven years prior. Shortly after their meeting, Lucy is abducted by a wizard claiming to be the famous Salamander of Fairy Tail to be sold as a slave. Natsu rescues Lucy and reveals himself to be the real Salamander, who possesses an ancient form of magic called Dragon Slayer magic, which grants him control over and protection from fire. Natsu offers membership to Fairy Tail for Lucy, which she accepts. Lucy forms a team together with Natsu and Happy, as well as Gray Fullbuster, an ice wizard with a strange habit of stripping, and Erza Scarlet, an armored female wizard. The five go on missions for their guild together, battling illegal guilds known as dark guilds, as well as demon servants of the ancient dark wizard Zeref.

During their adventures, Fairy Tail wages war with Phantom Lord, a rival wizard guild commissioned by Lucy's estranged father to destroy the Fairy Tail guildhall and return Lucy to him, revealing her to be a member of a wealthy family. While fighting Phantom Lord, Natsu encounters Gajeel Redfox, another Dragon Slayer who Natsu is surprised to learn had been raised by another dragon, Metalicana, who disappeared the same day as Igneel. Fairy Tail defeats Phantom Lord, prompting Lucy to cut ties with her father completely. Lucy and her friends go on a vacation while their guildhall is being rebuilt, only for Erza to be kidnapped by her former childhood friend, Jellal Fernandes, who had been manipulated by the wizard Ultear Milkovich into helping her revive Zeref using a construct known as the R-System. Jellal attempts to use Erza as a sacrifice for Zeref, but Natsu rescues her, destroys the R-System, and defeats Jellal, who disappears and is believed to be dead.

Lucy and her friends return to their newly renovated guildhall to find that Gajeel has joined Fairy Tail. After dealing with Laxus Dreyar, a renegade Fairy Tail wizard and grandson of Fairy Tail's master Makarov, the guild is faced with an alliance of three of Fiore's most powerful dark guilds known as the Balam Alliance. Fairy Tail is commissioned to fight one of the Balam Alliance guilds, Oración Seis, by forming their own alliance with wizards from the Blue Pegasus, Lamia Scale, and Cait Shelter guilds, the last of which is represented by Wendy Marvell, another Dragon Slayer whose dragon guardian Grandeeney went missing. During the mission, Jellal is discovered to be alive after Oración Seis forces Wendy to revive him. However, Jellal suffers from amnesia and helps Fairy Tail defeat Oración Seis instead before he is arrested for his previous crimes. Afterward, Wendy's guild is discovered to be an illusion created to care for Wendy after she was abandoned by Grandeeney, leading Wendy to join Fairy Tail.
Asura Cryin'
The story is a semi-serious school action story revolving around the main protagonist, Tomoharu Natsume. He is haunted by his childhood friend, Misao Minakami, who became a ghost after an airplane accident three years earlier, which Tomoharu barely survived. He takes the opportunity to live on his own when he enters high school in his new place of residence, Meiou-tei, and starts enjoying a carefree high school life. His life changes when a beautiful girl named Kurosaki Shuri appears with a trunk which she claims Tomoharu's brother, Naotaka Natsume, asked her to deliver to him. The presence of the trunk causes the appearance of Takatsuki Kanade, a girl dressed like a shrine maiden, who is after the trunk. Tomoharu is in possession of the trunk, which reveals secrets about the world they live in. Also, take the ending of the first season as the ending of the series

Code Geass
The series is set in an alternative present, where the world is split by three superpowers, the Holy Britannian Empire, the Chinese Federation, and the Euro Universe (with the exception of an independent Australia). The story takes place after the Holy Britannian Empire's conquest on Japan in August 10, 2010 a.t.b., by means of Britannia's newest weapon, the "Armored Autonomous Knight", or Knightmare Frame. In turn, Britannia effectively strips Japan and its citizens of all rights and freedoms, and renames the country Area 11 with its citizens referred to as elevens.
Skip Beat!
Skip Beat! follows the story of Kyoko Mogami, a sixteen year-old girl who loves her childhood friend, Shotaro Fuwa, but is betrayed by him. Having spent a large part of her childhood at Shotaro's parents' inn, she learned a great deal about hostelry and other such jobs. Shotaro, not wishing to take over his parents' business, moves to Tokyo to pursue a career in music. Sho, as he is called by his fans, asks Kyoko to leave high school and her life in Kyoto Prefecture behind to help him. Upon arrival in Tokyo, Kyoko lives an unreasonably frugal life and works multiple jobs to support Sho, spending nothing on herself and doing whatever she can for Sho, who eventually becomes ranked seventh of the top twenty most popular male celebrities of Japan. One day, she overhears Shotaro complaining about her to his manager, saying that she is a boring and plain girl. He proceeds to sweet-talk and flirt with his manager, in stark contrast to the cold and demanding attitude he usually exhibits towards Kyoko. Kyoko doesn't shed many tears when she learns that Sho wanted her along only to handle housekeeping duties. Instead, her "Pandora's box" opens and she vows vengeance on Sho. As she is carried away by security, Sho mockingly tells her that if she wants revenge, she had better become a bigger star than he is. And so, Kyoko changes her appearance and enters the entertainment industry, facing many challenges along the way. Skip Beat! follows Kyoko's journey to climb the showbiz ladder as she meets interesting people, troublemakers and friends alike, with hopes of getting revenge on Shotaro, as well as regaining the sense of compassion that she had lost when her heart was broken by him. As Kyoko cultivates her acting and friendships, she soon discovers a sense of self separate from her initial plans for revenge.
Demon King Daimao
This story of "love, magic, and battles" revolves around Akuto Sai, a boy who aims to become part of his country's highest order of magicians and contribute to society as one of its clergy. On the day he is admitted into the Constan Magical Academy, his aptitude test predicts the following: "Future Occupation: Demon King." Thus begins his severe school life in which he is resented by his studious female class head, desired by a girl with mysterious powers, and guarded by a beautiful female android.
Dragon Crisis
A normal high school boy Ry&#363;ji Kisaragi's peaceful life is turned into an adventure by the return of his second cousin, Eriko. Ry&#363;ji and Eriko seize a relic box from a black market broker named FANG. In the box, they find a red dragon girl whom Ry&#363;ji names Rose because of her rose like pattern on her left hand. In order to protect Rose from the black organization, Ry&#363;ji decides to fight using his power as a relic handler.
Air Master
Behind the scenes of the hustle and bustle of every-day life in Tokyo, there exist many people who strive to become stronger by competing against each other in street fights. The main protagonist is Maki Aikawa, a 16 year-old high school student. A former gymnast, Maki adapts her skills to a different way of life ? street fighting. The only thing that truly makes her feel alive is the rush and pressure experienced while fighting. With amazing power and grace, she fights opponent after opponent, repeatedly demonstrating the gymnastic talent that earns her her street name, "Airmaster". Eventually, Maki is exposed to a fighting league of sorts, known as the Fukamichi Rankings.

The Fukamichi Rankings consist of the world's greatest street fighters and martial artists. The Fukamichi Ranking fights are held for various reasons. Firstly, many fighters wish to test themselves, achieving the highest rank possible and stretching themselves to their physical limits. However, there is also a corporate side to the Fukamichi rankings, with many viewers around the world eager to watch the brutal yet awe-inspiring showdowns. Each Fukamichi ranker is paid a respective amount for winning within their fight. Maki, seeking to quench her thirst for that pressure or buzz she experiences only through fighting and to find her place within this world, scales the Fukamichi Rankings, clashing with the world's greatest fighting prodigies.
Fullmetal Alchemist
Edward and Alphonse Elric are two alchemist brothers searching for the legendary catalyst called the Philosopher's Stone, a powerful object which would allow them to recover their bodies (which were lost in an attempt to bring their mother back to life through alchemy). Born in the village of Resembool from the country of Amestris the two brothers lived there with their mother. Their father, Van Hohenheim, left home for unknown reasons and years later, their mother Trisha Elric died of a terminal illness, leaving the Elric brothers alone. After their mother's death, Edward became determined to bring her back through the use of alchemy, an advanced science in which objects can be created from raw materials. They researched Human Transmutation, a forbidden art in which one attempts to create or modify a human being. However, this attempt failed, ultimately resulting in the loss of Edward's left leg and Alphonse's entire body. In a desperate effort to save his brother, Edward sacrificed his right arm to affix Alphonse's soul to a suit of armor. Some days later, an alchemist named Roy Mustang visited the Elric brothers, and told Edward to become a member of the State Military of the country to find a way to recover their bodies. After that, Edward's left leg and right arm were replaced with automail, a type of advanced prosthetic limb, created for him by his close family friends Winry Rockbell and her grandmother Pinako.
