Two words. Jan Garbarek.

This man's entire run with ECM is absolutely awesome. He's Modern Jazz at its finest.

For classics, check out Oliver Jones, or Stan Getz.

I'll recommend Stanton Moore's work for some funk-jazz fusion. Also, try John Zorn if you're willing to take the leap into hardcore free jazz.

Here are some jazz standards that I have heard/played.

Spain
Is you is or is you ain't my baby
Salt peanuts (teehee)
I got rhythm
It don't mean a thing (if it ain't got that swing)
Twelfth street rag (I think ragtime counts as another form of jazz personally)
Fly me to the moon (a very nice one, I prefer it played bossa nova style)
Take five (already been mentioned but I do love it)
Blue Bossa
Birdland (is a great one to play!)

Jazz is a great genre to listen to, but I highly recommend that if you're into jazz and know how to play a music instrument you should play it too!

Personally jazz really isn't something I would play too much, but if you like jazz a lot, it's definately worth picking up a fake book (or anything full of jazz standards, old or new) and start playing :)
