Modern Jazz Quartet and Quintette of the Hot Club of France. Awesome stuff right here. Also much of what have already been said.

Thanks guys I like what I'm hearing, there's some fantastic stuff here I'm liking Jan Garbarek stuff very relaxing.
Absolutely. Check out "Officium", if you can find it. It's a clever mashup of Garbarek's soft jazz and... Gregorian chants.

And no, it doesn't sound New Agey in the least. It's beautiful.

Already done, my love for cowboy bebop is part of the reason why I'm getting into Jazz.
Glad I'm not the only one this happened for. Since then I've been listening to a lot of Miles Davis, John Coltrane, Dizzy Gillespie, Thelonious Monk, and Charlie Parker myself. All already mentioned no doubt, but as someone else that started off Cowboy Bebop, they are ones I rather like.

EDIT: I forgot to mention Dave Bruceck, I feel bad now... >.>

Lots of classic jazz albums recommended here so I'll go for some contemporary stuff.

The Necks- Australian jazz trio. Hyponotic and technically brilliant

Triosk- Experimental, inventive, amazing drumming.

Robert Glasper- Technically brilliant, quite a heavy hiphop influence, in a good way.

Special Others- Fucking incredible jazz from Japan. If it doesn't make you dance like snoopy you have no soul.

Vijay Iyer- Hugely inventive pianist, partly because he studied maths and physics.

Pretty much everything mentioned already -- though I'll mention Coltrane's "My Favorite Things" in particular), as well as:

John Coltrane - Live at Birdland (not to be confused with the song "Birdland," which is equally great)
The Tony Williams Lifetime - Emergency!

and anything with Max Roach, Art Blakey, or Elvin Jones on it.
I forgot to add my favourite things to my list. I felt like it was missing something.

Indeed, I definately think john coltrane's stuff is great :)

Just wanted to add something, personally I find jazz 80% player 20% song. The acctual song is usually quite bare and it's up to the players to make it sound good. I've never heard a bad jazz song, but I am sure that there are bad jazz players. If you don't like a particular jazz song it's probably because of the player(s)'s rendition of it.

Just wanted to throw that out for no particular reason.

In addition to everything already said, I want to add Fletcher Henderson, Gerry Mulligan, Ben Webster, Booker Ervin, and Firecracker Jazz Band.

Seriously. Gerry was a monster.

Good choice.
