The Ratchet & Clank series, because in addition to simple but intuitive third-person shooter controls, it's filled with great humor, fun characters, unique weapons, etc.
EDIT: Sorry, I missed the part about games for PC or 360, and Ratchet & Clank games are PS3 only. In that case, I'd recommend Saints Row 2, Mass Effect 1 and 2, GTA IV (and the expansions The Lost & Damned, and Ballad of Gay Tony), Dead Space 1 and 2, Gears of War 1 and 2, and Fable II and III.

Saints Row 2, GTA: San Andreas, Max Payne, Just Cause 2 all for PC.

If you insist on 360, Crackdown.

Socom, Syphon Filter, Uncharted, Metal Gear Solid, Ratchet and Clank. Now they're all Sony exclusive, but honestly, they're the best. You've played Gears of War and I was going to recommend that, Army of Two (I've only played the first one) is pretty good, it's like a Gears knock off in every sense. It's not as good as Gears, but if you need some new flavor, then try Army of Two, pick up the first one, it's got to be like $15 or something.

Prototype, Red Faction: Guerilla, Vanquish, ME 1/2, Saints Row 2, Just Cause 2, Max Payne, heard good things about Mafia II but it wasn't my cup of tea, MEchWarrior games (seriously, play these, or at least MW4 Mercenaries), Transformers War for Cybertron, AC Brotherhood with the crossbow, and Lead and Gold is a decent download.

Freedom Fighters

Although it has aged slightly (it was released back in 2003), it's still a fantastic game in and of itself and is easily one of the best TPS games I personally have ever played.

Red Faction Guerrilla, Jak 2 and 3 if they count, WarWorld 3, and Star Wars Battlefront.
That'll keep you entertained for a while ^^

I'm sure this won't count, but I highly recommend firing up steam and downloading Alien Swarm.
It's a free 4 player co-op game with a full campaign, and it's fun as hell.

If you don't mind having a good 3PS without cover mechanics, then go Just Cause 2, the Star Wars Battlefront games (also does FPS at any time if you wish) or Mafia 1. If it has to be cover, then I'd say Mafia 2 or The Saboteur (Seriously, when killing people outside the missions is this much fun...)

However, if you want to do a bit of Xbox 1 backwards compatibility on your 360, get the first Mercenaries (Playground of Destruction). It does combat and pyrotechnics -better- than the GTAs. One of the greatest sandbox 3rd person shooters ever made

Army of Two: The 40th Day. The gameplay is stellar, it has a deep weapon creation system, it's co-op and teamwork is encouraged. Also, the cover system is one of the best I've seen. Check it out.

Well those are some of the best, in my opinion. And it would definitely give you a nice variety because none of those are even close to the same.
