As much as I would love that being a fan since Blood Omen, I think remakes are more or less a waste of time when something new could be made.
I agree, mainly because (although Blood Omen 2 was frankly dire), Legacy of Kain: Defiance brought all the threads from all the other games together so perfectly (Raziel's speech to Kain right at the end is freakin' awesome) and left it on a cliff hanger. We need a new game in the series.
As for the FFVII remake, I'd prefer to see the final game in the compilation be in the style of the original, standard FF gameplay, full blow world map, etc. Because, plot wise I have the theory that:

The story will once again feature Cloud as the main character, but the party will be caught up in a war between the newly awakened (and potentially near-deified) Genesis from the end of Dirge of Cerberus (otherwise why introduce him at the last second in one game and then go to the effort of writing his backstory into the canon in the prequel) and essentially a tide of metamorphosing Sephiroths. Think about it: Sephiroth still wants to essentially destroy the planet, but he can only manifest through the remaining Sephiroth clones, or possibly someone with geostigma if they survive long enough. So potentially, they could begin to form an army. However, Genesis has been lying in state in deepground for a good few years, which traditionally makes someone more powerful when they awake. Plus, he is similiarly enhanced thanks to the G project, and has managed to survive degrading like everyone else from that project. Genesis most likely still sees himself as defender of the planet, as he is likely still obsessed with the Goddess, who appears to be tied to the lifestream and the fate of the planet. So, we have someone nearly as powerful as Sephiroth who has since then undergone one of the classic stages of apotheosis, thereby deifying him and making him likely more than Sephiroth's match. He also has Weiss, who may or may not survive to be a worthy ally. Sephiroth in his either recurring or multiple incarnations will be opposed, trying to destroy the world. In between these two blindly obsessed factions will be Cloud, less poweful than either, but still twice mako poisoned, jenova augmented, and witha determination that gives him a strength not to be underestimated. Also, cloud has friends, whereas Genesis would work near-alone and Seph would have no allies but himself, and each incarnation would share the same arrogance and lack of foresight that have led him to be defeated be a weaker opponent 2 times now.
So, as a basic premise, they have to groundings for something pretty darned epic right there. I'd prefer to see that, thereby justifying the horrors of 'Dirge', rather than a remake that will probably change areas of the story and ruin the charm of the game. Well, just so long as they don't make Vincent damn-near-freaking-godly again. Seriously, if he was that powerful, why couldn't he have destroyed Sephiroth in that final battle single handedly? And why did Cloud need to defeat Bahamut Sin in Advent Children. Vincent in Dirge of Cerberus was just epic continuity fail.
