Let me preface by saying I actually agree with you both, however:
While the sex of the skeleton can actually be determined by examining it, how the heck would you be able to tell the ethnicity of of the person the skeleton came from?

They can wear hats or wigs or maybe hold a flag.

If the show Bones can be trusted, you actually can determine ethnicity by bone structure, along with age, gender, height, diet, their entire vacation history, how many women you've slept with, if they ever had a urinary infection, the consistency of the last poop someone took before dying, and the exact weight of the total pork consumed in the last 7 years, 42 days, and 2 minutes of the individual's life.
