for Baldur's Gate 1. I'm not sure you can beat him without tons of wands of monster summoning, but it feels really cheap. There are spoilers here for the ending of BG1.
Here's the way I've always done it: fully buff my party and position them where the invisible mage appears, then summon monsters there too. After I speak with Sarevok, I pull my main character back, use a scroll of magic immunity, and move all of the rest of my party AWAY from the place where the mage appears: EVERYTHING depends on avoiding the confusion tattoo thing he does when surrounded.

After killing him, it becomes possible to pull Sarevok without aggroing his allies. Here is where the wands of monster summoning are mandatory: it doesn't matter what armor or buffs you have...this guy will pretty much one or two shot EVERYONE, and he rarely misses. the trick is to get the summoned monsters to agro him, then shoot him to death with super expensive enchanted arrows..

IS THERE A WAY TO DO THIS WITHOUT CHEESING THE WHOLE ENCOUNTER? Sarevok just feels so grotesquely overpowered on higher difficulty. you can't fight toe to toe with him.(granted there are a lot of encounters in BG where you can't really fight toe to toe. but still.)

It's very difficult. last time I beat him a few months back I did indeed use a conjurer and alot of summoning spells. Before that though I just used to go beat him using invisibility, scrolls of immunity and a lot of backstabbing. He is a tough bastard because he can withstand ALOT of backstab crits.

Possibly he is the toughest of all video game bosses. Here is my personal favourite tactic, It does help when you mind control his lackeys to beat him up though. It can get a huge chunk of his health off aswell as get rid of his pawns for you as they will inevitably fall to the overall toughness of Sarevok. Once this is done you MIGHT be able to strike him down with your party (and that is a BIG fucking might!).

The difficulty of the last boss fight in BG1 is so hard, on my conjurer it took me a good 7 or 8 tries to kill him.

Edit: Just wanna say this. I FUCKING LOVE YOU BALDUR'S GATE! :3

I'd say it's a little TOO hard. Being unable to beat the boss without exploits is not ideal.

Not impossible but the summoning a lot of creature tactic is a good one and I used it well on my second play-through the game.

The first play-through I didn't have the ToSC expansion so I let a few of my party be sacrificed to win (I think I used Minsc as a tank and Garrick, cause he is not really good for much else, to stand to the side shooting magic missiles so he would attack him second while the rest of the party took out his followers). Still took me more than my fair share of reloads.

Second play-through I wanted to continue to ToSC stuff so the animal summoning was a goo tactic).

One thing that was/is cool about Sarevok is that you can't waltz through him like so many RPGs both prior to and post BG allow you to do. You can't reach that level when everything is suddenly easy to take our and the challenge disappears.

He's highly resistant to magic but not completely immune, so just straight up blasting him with a barrage of magic missile while swarming him with summoned creatures is a solid tactic. When you also count for his companions it gets a bit more tricky, but then unlike Sarevok himself they're just regular (If high level) opponents and can be killed in the usual ways while Sarevok is kept busy with a veritable army of conjured creatures.

Just be sure to watch out for all the traps in the room as well, some of them are area effect spells and while they probably wont kill you, they'll kill whatever you've summoned and by extension allow Sarevok to get in close.
