There are a number of polytheistic religions still practiced today, and many more in the past. It could be something as simple as a carryover from tradition, it could be their beliefs, or it could be part of the fictional world in which the story you are watching is based. There are so many answers to this question that it would be difficult for one person to list them all, so lets just say to each their own and let them go about it.

I see it sometimes but only in the context of geeky/nerdy people. I think it's not so much out of consideration for not taking the lord's name in vain, but because they see it as a kind of cool, non-monotheistic way to say the same phrase. In a way it's still supposed to offend Christians, or serve as a minor act of rebellion against it by not acknowledging a singular God in your speech. At least that's how I usually see it.

I've seen it used more and more often over the years but, frankly, I started using the phrase "oh gods" when I was a sophomore in college (2005). Started studying classical history and was just fascinated by ancient mythology (Greco-Roman to be precise). Decided that using the phrase "oh gods" was better not just from my own, personal point-of-view (agnostic) but gave me a slight kick whenever I did.

However, that doesn't stop the occasional "oh god" from slipping out, probably due to cultural conditioning. Not that it matters where I live: I swear that half the people in my state are either actual Catholics while the other half don't give a damn. I also don't care about offending anyone because they don't offend me by their turn of phrase. If they are bothered by how I exclaim something I dislike/like, then they've got other issues.

Well, given that my personal deity is Athena, and Athena comes with whole bunch of other Olympian gods, and saying "Oh goddess!" is even weirder, I go with "Oh gods!".

Also, it covers all the bases, and I just generally refuse to attribute anything to a capital "G" Abrahamic God since he's just Zeus, and for that I'd say "By Zeus!".

Also, it makes people wonder.

Why does there have to be a reason? Whenever I exclaim something out of shock or pain I never think about why, which is why most my swear habits are biblical (my native tongue have almost exclusively biblical or sex related swearwords and I don't feel that the sex related rolls off the tongue as much).

Using it as a phrase, that is a chosen word rather than a reflex I'm not sure though. I could imagine myself using it since there are so many of them being worshipped, cast a wide enough net and all that...
Maybe some people simply use it because they like the way it sounds?

Kaiba: Oh... my... money...!

Yugi: Don't you mean God?

Kaiba: You worship your thing, I'll worship mine.

I've got to admit, I'm not sure why people add the 's' unless it's more to joke around with it, like Bender's "Oh your God" or Yugi's "Oh my various Gods!"

Maybe people do assume that saying "God" suggests they only believe in one, so they changed it? I dunno.

For me, I just use whatever phrase seems appropriate at the time. If it would be seen as rude to use "Oh God" or "Jesus Christ!" then I will avoid using it unless there is no other way to phrase it.
Also, sometimes myself and a couple family members will yell out, "Damn it, Prometheus!" or "Fucking eh (A), Prometheus, not again!"

Because they believe in multiple gods presumably? Or maybe they're atheist and they're just trying to put a spin on the usual phrase.
