Haven't read the books but I just finished watching the film and this immediately occurred to me. Mainly because of the odd way Ramona stressed the line "Seven deadly exes"
Although I think you're stretching it a bit, trying to find a fit for all the exes. There are definite links between 7 deadly sins and the battles Scott faces
Here's how I put it together:
Wrath
Matthew Patel (lots of shouting and fire, nothing more really)
Pride
Lucas Lee (Defeated by challenging his pride 'I bet you can't grind that rail' etc)
Gluttony
Todd Ingram (again a bit of a stretch but overindulgence was his eventual downfall, gluttony is most commonly associated with food)
Lust
Roxie (Lesbian, he defeats her with an orgasm!)
Envy
Envy Adams (The characters freaking name is Envy, also wasn't interested in Scott until she hears he has a new girl)
Greed
Gideon Graves (wants Ramona all to himself, general wealth and extravagance etc)
Sloth
Scott (Scott doesn't make the most of his talents and doesn't go after what he wants, however he defeats this part of himself [Mega Scott] when he finally takes control and goes after what he wants)
Although it's not a massive theme and you can analyse these things too much there is definitely something there.
