I have no idea how many volumes they are but they are a bit over 100 chapter (so it shouldn't be more than maybe max 25 vols right?)
Soul Eater and Full Metal Alchemist.
Both are good mangas, and both are good animes :)

The plot, at first glance, is pretty boilerplate but it's the characters and there motivations that throws this series into excellence.
Asamiya Yuuhi was an ordinary college student... until the day a lizard showed up and asked him to help save the world. The next thing he knows, he's been given a ring and special powers, plus an enemy stalking him. However, he's saved in the nick of time by the girl next door, Samidare, who's planning... WHAT kinds of things?! This is an unconventional story that mixes ordinary life with the bizarre and supernatural!
Ok sound pretty average untill you actually see the MC as he hates everything, as in when he's asked become a "Beast Knight" to help save the world from being destroyed he's just kinda like I ain't helpin, no biggy if it's destroyed anyway. Girl next door who's the princess meant to save the world? She's gonna do it but then she's going the destroy it herself. Drawn in by her ideals the MC becomes her knight and they enact their secret plot to destroy the world with their own hands while helping the rest of the Beast Knights save it from the more imminent threat.

What starts as a Action Comedy becomes an epic on what the true weight of life is and what true torment, hate and love can do to a person.

Try Black Lagoon for a pretty interesting manga. 85 chapters so I guess that's within your limit. However, updates are slow.

Also, there's a Japanese version of Final Countdown called Zipang that's out. It's 70-some chapters.

Completely released and translated, unless stated otherwise.

Doubt. Nice and short. Murder and mindgames. Licensed and published by American publisher. 2 omnibuses.

Judge. From the same author. Seems to have similar theme as Doubt. Haven't read it yet though.

If you're a fan of Urasawa Naoki's(Monster's author) work, definitely read Pluto and 20th Century Boys + 21st Century Boys. 20CB+21CB are much longer than your preferred length, but definitely worth it. Licensed, fully published. And also Master Keaton it's not licensed and fan translation is at around 3rd volume. Also 36(?) episodes of anime. Billy Bat is still ongoing. Wasn't licensed by Americans. Currently at 100+ chapters. Urasawa Naoki gets my personal "Must Read" stamp of approval.

Superior Day. Korean web-comic(long color pages). About serial killer. Very good. Fan translated. 40 chapters.Must read

Melo Holic. From authors of Superior Day. Rom com with a twist. Gooood.Must read

Ai-Ren. Masterpiece. Cute, tragic, heart warming... plus mildly distopian future. I doubt it was licensed by American publisher.Must read

Liar Game. Deception and mind games. 300+ chapters. Sadly incomplete and on hiatus.

Mirai Nikki. Fun and psychotic. 12 volumes total. Licensed but dropped after 10 volumes. Fan translation is complete.

Bloody Monday. Terrorists, spies, sinister plots and betrayal. First part - 11 volumes. Licensed and fully published. Part 2(8 volumes) and 3(4 volumes) were not licensed, but fan translations are complete.

Gantz. 30+ volumes but very fast and nice read. Graphic violence and very nice art style. It relies more on it's visuals than on text.

Can recommend more if you tell more about your preferences.

I can vouch for this... I saw the first 3 volumes at the bookstore near me and read only the first volume just the other day... What do you do with 7 criminals that each represent one of the 7 deadly sins? Allow them to pick which one of them is the most guilty... (I would say more, but then it will definitely fall into spoiler territory...)

I need to also read both 20th and 21st Century Boys, however the length has been the main factor for not trying to read it myself... (almost like the manga version of Monster...)

Nichijou is also a really long runner, except it has no overarching plot, stuff just kind of... happens. And it's hilarious.

Hellsing. Hellsing Hellsing Hellsing. Short, sweet, and damn good. It's a bit of horror, a bit mystery, and well damn near most manga is has it's quirky bits. And it is pretty much completed with 10 volumes.

Just finished "Uzumaki", horror manga of about 20 chapters I think. Really strange and weird, but fun to read.

No Longer Human - 3 Books, it's a fantastic set of books, it's based on a novel under the same name written by Osamu Dazai probably one of the most depressing things I've ever read, it makes it worse that it's technically an autobiography. The manga is written by Usamaru Furuya. He also wrote a manga version of Suicide Circle.

Hellsing as previous people have said is really good which is about 10 books.

I've just noticed that no one has mentioned Death Note which is only 10/11 books I don't remember which.

Nausicaa of the Valley of the Wind is good, you can get a all in one hardback on Amazon.

Battle Royale has 15 volumes but it can be quite expensive for some books but it is really good.

I can't seem to find the manga but She, The Ultimate Weapon is quite good, although I have only seen the anime the manga goes under the name of Saikano
