I once thought of a zanpakutou for an RP, a water sword. The shikai, Erosion, is basically a very powerful, adjustable water nozzle that can go from fire hose to water jet cutter. The bankai is Reflecting Pool. The water forms a vertical mirror between the wielder and the opponent. The wielder steps through the mirror and emerges on the other side as a replica of their opponent, leading to the classic "Can you defeat yourself?" trope in the ensuing fight.

Zanpakutou- Heart of Sorrow.
Shikai: Show us your Anger- Sword extends from a traditional to a long Nodachi and the blade turns a deep blue.
Its Shikai allows me to control the Gravity in a limited area surrounding me.
It also allows me to effectively control the gravity around an object in that area, Fore example, my opponent or just his weapon.
I can make the gravity strong enough to make the weapon too heavy to lift or simply crush it.
I can also influence the gravity around myself using it, for example, to make my sword heaver while i swing it adding to its destructive power.
Bankai: Share your compassion- Sword remains the same but my range of control become unlimited.
I also gain the power to repel and hold objects just by influencing the gravity in the area and eventual gain the power to use the force of Gravity to tear open holes in an secluded space, creating a small wormhole.

Starts off as a rusted half broken blade and gradually evolves into a red Katana with a black serrated edge. With each swing it draws strength from whatever it strikes, causing it to grow sharper and harder each time. This gathered power can also be released in the form of a Crimson horizontal wave or blade.
So if you prolong the battle your weapon will eventually break and this will simply get better.
Bankai:
Twin wrist blades (similar to that of a predator) on each wrist. Armor counsisting of hundreds of super hard razor sharp blades. This mode draws strength from the user itself and can also draw strength from attacks of the enemy. It also induces an animal like need for battle and blood lust. User cannot disengage from bankai until he is defeated or enemy is totally drained.
In this mode you won't lose a weapon simply the strength of your attacks. So what would normally blast a hole in a person would simply be a hard push and the stolen energy is used to envigorate the user.

I though about this after seeing Izuru fight.
The idea of controlling the weight of an object in a fight has a lot of possibility's.
