Rice is cheap, you can buy large bags of it, and doesn't take long to make, very good indeed. I would wash your rice before hand, makes it taste better by cleaning the dirty husk on the outside.

A good recipe I know is a combination of rice, diced tomatoes, black or brown beans, and shredded cheese. Combine all, put cheese on top. Very simple, surprisingly good taste for price and it makes a lot. Good luck and remember to buy vitamins so you can get proper nutrition. Your diet now as your body finishes growing may affect your health in later years.

Spinach. I slap that stuff on damn near everything.

Sandwich? Slap some spinach on that beast!
Canned pasta/beans? Slap some spinach on that beast!
Rice? Slap some... you get the picture.

In addition to spinach, I also like to throw in some chicken breasts, unless there's already meat in what I'm making. The kind I use is fairly expensive though (about $11 for 500 grams of pre-cooked, seasoned chicken breast).

Also, Low-Fat/Fat Free Yogurt is awesome. It tastes like a hybrid of pudding and ice cream, but with low/no fat, there's hardly any calories. Decent source of protein, too.

I love making omelettes with cooked ham and cheese, then putting them in english muffins... and then slapping some spinach on those beasts.

As far as non-omelette sandwiches go, I prefer the awesome sandwich combination of chicken, peanut butter, and spinach. When making a sandwich, remember the holy trinity of meat, cheese, and greens. Although the cheese can be replaced with mayonaise or some kind of sauce (in my case, peanut butter).

As far as drinking goes, you should stick with water, milk, and 100% fruit/vegetable juice. V8 is a staple in my diet, but it's best not to chug it because it has a lot of sodium. 2 to 3 250mL glasses of V8 a day should do.

Banana Milkshakes are a favourite recipe of mine.

1 banana
1 cup of milk
1 tablespoon of French Vanilla Syrup (or another syrup of your choice)

It's a fairly versatile recipe as well. You can add it to cereal, or replace the milk with yogurt. Feeling adventurous? Do both!

CUP-CAKES: one box cake mix and one cup soda pop. Mix together and make cupcakes as said on the box. Doesn't make a good cake though.

As few of you know, and even fewer of you care, I'm heading for college this August. This is a monumental step in my life when I must learn to live on my own. I need to find a job, pay rent, clean my own room... and cook my own food. I am not a culinary expert. So, I ask you, people of the Escapist, to please list some simple recepies that are affordable by a frugal college student. What kind of foods did you prepare during your time in college? Any assistance would be greatly appreciated.
This is one I learned from my Father. He was in the US Army in the late 70's, and he often ate what was commonly known as SOS, "Shit on Shit" or "Shit ona Shingle." It's very simple to prepare.

Two parts microwaveable rice
1 can of Cream of Mushroom Soup (or any other cream based broth soup)
1 slice of bread, optional.

Cook the rice, cook the soup, then mix and place on the slice of bread. It doesn't look too good, but it tastes great and is better for you than half of the stuff you'll get in the dining hall.

Let me know if you need any others...been there, could teach a masters course on cheap, good eats for the college student!

I've lived on ramen for most of my life and I've never had a problem. I'm serious, it was my favorite snack food for the longest time. I'd eat it as dessert after family meals. Just be sure to eat other things with it and it wont be a problem
Oh, it doesn't hurt from time to time. I too have had my fair share, but I've salted myself out since childhood and I'm guessing my body just got used to it (because I'm still healthy and alive and all), but I probably wouldn't recommend starting a high sodium diet like that all of a sudden. It is a cheap food source, just don't live on it. =]
