Some of the guards dialogue is "Let me guess... someone stole your sweet roll?", referencing your birthday party in Fallout 3.
I knew I had heard that somewhere! As soon as that guard said that I had to do a double take because I knew I had heard that line many times before, but I couldn't place the reference, actually, wasn't there questions about sweet rolls in Morrowind?

Yes, I liked this one. Considering Bethesda made both Fallout 3 and TESV: Skyrim I think it is likely a reference to Fallout although New Frontiersman also has a good point with the Morrowind reference.

Not really an easter egg but I murdered someone for a quest and a week or so later came back to the town and an NPC stopped in front of me and said "(NPC name) has been murdered, didn't I see you coming out of there?"

I was significant.

Seriously though, is he in the game again?

Not really a huge one, but brotherhood i like how you can summon the spirit of Lucien Lachance to fight for you
That's actually pretty awesome; I found Lucian was one of the most hilarious characters in Oblivion and and don't think he was meant to be...

I ran into him at a mill somewhere

How he survived 200 years and the raising of Cyrodil is beyond me.

Considering my Nord's backstory has him coming home to Skyrim after losing all his Champion armour and Shivering Isles stuff in the war, only to be arrested at the border...well...doesn't really explain how he still has blonde hair after two hundred years.
In my defence, I didn't know it was 200 years till a loading screen hint told me.

Oh. Not really an Easter-egg, but a quote that made me laugh, purely because the Skyrim accents are distinctly Eastern European. They seem to sound more Lithuanian than Scandinavian.

"That is one.....big hammer."

I found what I think was supposed to be excalibur, in a small lake there was a skeleton arm holding a sword.

Are they easter eggs, though? I always figured that since the vocabulary for any fantasy universe was extremely small that it was all just a coincidence.
The vocabulary of fantasy is as large as the vocabulary of the language in which it's composed, and an Easter egg is just a creative allusion to something else. Have you been to Whiterun to see the Jarl? While taking the pc to see the court wizard, he explains that the man is someone he's had investigating "these dragons and rumors of dragons," which is a deliberate reference to Matthew 24:6 where Jesus tells his disciples not to panic when they hear of "wars and rumors of wars" that will occur at the end of the world but not cause it.

Arnold Schwarzenegger was apparently one of the voice actors (he wasn't, but damn it sounds like him)

Are you serious? Where?
um I'm pretty sure I was heading to Ivarstead he was up on a hill I was sneaking he saw me summoned some thing I couldn't see what at the time and then charged down at me. I killed him then when up there and there where 3 chickens with purple auras and a pillar with a nest on it. I couldn't believe it either. after some time the chickens just poofed and where gone.

Someone at Bethesda must have been traumatized by a chicken when he or she was young. There's a killer-chicken gag in Hunted: The Demon's Forge as well--an inXile game published by Bethesda. Maybe it's a contractual thing.

I got assaulted by Necro-goats at one point. I also had a Necromancer apparently resurrect himself as there was no one else around. Bug I think though.

OT: There is a perk in the Conjuration tree called Dark Souls *nudge nudge wink wink* say no more.

Might just be me finding patterns where there are none, but does "Savos Aren" sound familiar to anyone?
