I'm getting Skyrim soon (scheduled to arrive on Christmas Eve) and since Bethesda games always are broken and unplayable on initial release, what mods can I download to make the game better for PC?

False, I'm playing vannilla and its not broken or unplayable, quite the contrary actually.

I don't know the current state of it, because patches have screwed it up, but there is a small mod to allow Skyrim to use more than 2Gb of RAM. If you have RAM to spare and are running 64 bit that would be the first thing to do. The second would be an improved UI mod, there are probably a couple. Other than that I would try it out and see what annoys you.

I don't have the game, but this based on what I have heard and seen. The UI looks particularly poorly though out, with massive amounts of wasted space.

The RAM issue was actually fixed today. Other than that, I haven't experienced any game-breaking bugs. My house in Windhelm didn't get cleaned up properly, Derkeethus is stuck in his cave and won't follow me out, and bookshelves don't work, but that's really it.

The only mods I have are the lockpicking one, because I didn't want to play that minigame on a character who isn't a thief, and the Ore one, because without that mining nodes are very hard to find out in the world. That isn't a bug, I suspect, just poor design.

Skyrim's patches break the game FAR more than the release version. I haven't downloaded any of the patches because I play just fine without them. I'm on the PS3 version, too, and I have encountered no glitches whatsoever on the release version of the game, aside from that lag that is more prominent on the PS3 version, but that's it. And even then, it's really not even that bad.

Aside from UI mods and texture mods, there really aren't many mods out yet. Once the mod tools get released, then there will be more mods.
