If any sort of RPG tingles your tastebuds, I would have to say both.
Amalur felt to me like a really good 3D Zelda or Fable (1) clone, with splendid skill tree and fighting systems, that give you pretty much total control of the battlefield and your way of implementing all your skills and roll your own mix of everything.
Skyrim is bigger in scope and less comic-y in appearance, and its skill system might be a little less visual and a bit harder to get a grip on at first, but it's just as rewarding once you've figured it out and settled for a strategy. Some dungeons/caves/enemy encounters might feel a bit repetitive in Skyrim, but I consider this to be a minor gripe, as it's nowhere near as in-your-face offensive as in DA II.
They are both proper, good games and they both give you a lot of freedom to build your character any way you want, be it a warrior type with superhuman bow skills, a magically enhanced rogue or a freakin' tankin' battlemage - in Skyrim it's all pretty much WYSIWYG from the get-go, Amalur has some fun bonus perks depending on how you decide to dedicate or spread your points. The expansions to Amalur might not offer excessive fun, as you'll probably reach the level cap well before getting to the endgame already. Skyrim's dev is alive and kicking, and they've handed the user base the best thing to happen since LEGO, so if you're PC, Skyrim is a must no questions asked. If you're console, Skyrim is still a splendid game, but there will probably be bugs and tings.
Disclaimer: I absolutely loathe and hate Dragon Age II
