I've had exposure to snipers in FPS games

Theres no snipers in FPS. Snipers move in real life rather than stay in the same spot.

Insurgency, a mod for the Source Engine, is quite a fun game if you can find a decent server. The sniping is pretty easy, but if you want to go for difficulty I heard that the new game Sniper: Ghost Warrior is going to be really hard/realistic.

Sniper Elite is probably the best. I think it's on the PC and original Xbox.

ArmA II has great sniping too, especially with the ACE2 mod installed.

Get some quarters, find an arcade, and knock off a few hours playing Silent Scope.

That's IF the machine is actually working. Almost every time I tried to play it, either the scope was way off center or it wasn't working at all. It seemed like that game had some sort of curse on it.

Or maybe it was broken from being played so much. >->

Sniper Elite is what you are looking for. It is on PS2 and PC, and likely XBox as well.
