Oh! Heavy Rain definitely.
A simple, fun, and not too serious game that nonetheless has a great combat system and cute animations: Mini Ninjas.

The inFAMOUS and Uncharted series, the LittleBigPlanet series, at least one Resistance for the sake of having a decent shooter, and one Killzone for the sake of having a GREAT shooter.
Past that? It depends on how invested you like to be. I'd suggest Demon's Souls or Dark Souls, but they're both incredibly punishing. Heavy Rain, but you might not appreciate David Cage's take on storytelling.
I'd also suggest the God of War Collection, which is dirt cheap, and God of War III. Horrible storytelling and character design in all cases, but oh-so-awesome gameplay.

Uncharted 2 is great. I got it with my PS3 and didn't expect to like it, it's now possibly ranked as the second best console game I own.
Other than that I don't know what to tell you. I'm not a massive console player, though I did play Resistance 2 at a friend's. That was good.

I could never narrow it down to a couple. My PS3 collection is relatively small (20 games or so? 30 tops?) but each game is an absolute must-own, and almost all are exclusives. My X360 collection is bigger, but it's almost all multiplats.
that said, Uncharted 1 is probably the most obvious place to start, though I'd also throw Ratchet & Clank: Tools of Destruction on there.

I'll echo the sentiments others have offered in suggesting the Uncharted series as a good starting point. If you're into sports, try MLB The Show, by far the best baseball game out there and a Sony exclusive. The God of War series is also worth playing, great stress relief in that one

My first PS3 games were Uncharted 1, The Darkness, which is a highly underrated FPS that you can get used for basically nothing now, MLB The Show and Oblivion's GOTY edition and I loved all of them.

Infamous 1&2 (this should be the #1 games you get for your PS3)
Uncharted 1-3 (i can argue that this should be #1 on the list, but i prefer the sandbox aspect of Infamous a little more, but a very close #2 none the less)

My first purchase (with the system, even) was Uncharted 2, and I imediately went on Amazon and ordered the original Uncharted once I finished it. (Having to wait a bit before getting the third installment... bloody U.S. economy.)
Metal Gear Solid just released an HD Collection (MGS2, MGS3, and MGSeace Walker) which I would recommend simply for MGS3, easily my favorite of the series.
inFamous was a rental for me, but if I had the cash, I'd buy inFamous2 in a heartbeat.
Portal2 allows you to download the Steam copy to your computer if you link your PSN accoutn to your Steam account. And, it's a perfect co-op game for date night, if you don't mind getting disassembled* by your significant othera few times.
Heavy Rain was VERY worth the rental. It may seem slow and plod along at times, but for me it was a masterpiece of emotive immersion. So much so that I could only play it without anyone else home, because the storyline upset everyone else so much. Got to "Press 'X' to "Jason!" and was told to 'Turn it off, now.'

god of war series, rachet and clank series, sonic generations maybe, modnation racing for a bit of creativity, shadow of the colossus, the new mortal kombat game, and for that matter any fighting game,
Valkyria Chronicles for sure! It's freakin' great in the story department! And the CANVAS engine makes the entire game look fantastic.
Catherine and Ace Combat are also great choices (though the latter isn't exclusive).

It really depends on what you like to play. Shooters, for example, do me very little good because I don't really care for the genre even though it contains some very fine games. Personally, I would say the ICO/SotC HD collection, Demon's Souls and Dark Souls, and maybe some really bombastic silly fluff like God of War III or Bayonetta.
