I'm not sure anyone can really answer that until the game's out. Heck, I'm not sure anyone can answer that except yourself.

I didn't really like Oblivion but I didn't dislike it either, personally. I don't really know if I'll like Skyrim and I don't think any list of changes or gameplay videos will answer that for me. I'll just have to play it.

From what it looks like, Skyrim is basically going to be Oblivion 2.0 in the good way.

Better combat, better dialogue, and dragons. If you hated everything about Oblivion, I doubt you'll like this. Though it's also worth saying that Oblivion hasn't exactly aged well.

I would say wait a week after launch and see what other people think of it.
There are people who don't like oblivion, but it was a critical success. Skyrim might contain exactly what you may have hated about oblivion, but it's definately going to get good reviews as well unless it is a genuinely bad game for everyone.

Personally, if you have a friend who will probably play/love skyrim, ask him if it has any of the stuff that you didn't like about oblivion.

Also, Oblivion (PC) does have a special advantage over the console versions, letting you mod the game to make a customized experience to your liking. The mods oblivion has are quite diverse and can change the game completely, say for the OP you thought the gameplay was boring, you might want to get a mod like oscuro's oblivion overhaul (for example) that changes the gameplay quite a bit.

I hold the same hopes as OP, the elder scrolls never did it for me, I loved the premise, but when I finally sat down with the game, it bored me to tears, then I used the console to do some stupid shit, found it a little fun, but then it petered out after no more than 3 days.

But I'd really like to like Skyrim, but I guess I'll have to wait and see.

*hrmpphhhhhh*

So, I suppose Skyrim is Roleplaying right? oO

When you are able to roll with it, to embrace its idea you might get addicted. But If you're cautious and hestitant and try to find it's flaws - Oh boy, oh boy will you find its flaws then...

It's like the cute girl that you see on the bus. You either go for it and try persuading her or you just keep dreaming but never get into something more serious.

So to sum it up:
In case of doubt - don't...

It'll be like oblivion but different, it's hard to say whether you'd like a game based solely on your opinion of one other game.

I'm kinda on the fence...

I LOVE dragons, and norse mythology as well...

...But I'm seeing some terrible oblivion-esque AI in the trailers so far. Also, the dungeon shown still had a lot of "bland tunnel" syndrome to it, with only 1 or 2 rooms being of any interest. And there's the issue of first person being terrible for a game involving a lot of melee combat (third person allows your character to be flexible and move around without a stiff first person view, think of the difference in combat between Oblivion and Assassins Creed) ("just use third person!" well... third person in oblivion was horrid as well, from what it looks like it's improved somewhat in skyrim, but a lot of the awkward movement still shows up)

Hard to say. I haven't played Skyrim, so I can't really compare the two fairly. From what I've seen of Skyrim, if you really did not enjoy Oblivion, I wouldn't recommend it to you.
